[Tart Dough]
220g cake flour
40g almond powder
50g sugar powder
2g salt
80g unsalted butter
40g eggs
[Filling]
70g unsalted butter
50g sugar powder
50g eggs
10g cake flour
70g almond powder
2 drops of vanilla oil
[Topping]
150g fresh cream
20g sugar
10 nectarines
apple mint
▶Recipe
1. Add cake flour, almond powder, sugar powder, and salt and sift together.
2. Add cold unsalted butter and mix.
3. Add eggs and knead the dough.
4. Cut the dough in half.
5. Roll out on parchment paper.
6. Rest in the refrigerator for 30 minutes.
7. Cut the dough using an 18cm mousse ring.
8. Arrange the dough into the mold.
9. Use a fork to make holes in the bottom.
10. Cover the dough with parchment paper and pour the pressing stone.
11. Bake in an oven preheated to 190 degrees for 12 minutes at 180 degrees.
12. Remove the pressing stone and let it cool before use.
13. Beat unsalted butter at room temperature.
14. Add sifted sugar powder and mix.
15. Add the eggs twice and mix.
16. Sift in the cake flour and almond powder.
17. Add 2 drops of vanilla oil and mix.
18. Place the filling into the tart and flatten it.
19. Bake in an oven preheated to 190 degrees and 180 degrees for 25 minutes.
20. Cut some of the nectarines into thin slices and break the rest into pieces.
21. Add fresh cream and sugar together and whip until firm.
22. Put whipped cream on top of the tart.
23. Top with cut peaches.
