      I don't have one book -- gleaned all this information by reading dozens of books and university publications and attending many hands-on workshops.

    I had some Asian pear. Before I prune them. I'd like to ask you which way is the best ?
    1. Modified leader
    2. Open center
    3. Central leader.

      As stated in the video, open center forms are best to access for home gardeners. If your trees are fairly young and can be shaped into that form, that's a good goal.

    What's different between winter and summer pruning ?

      Winter pruning (maybe best done very late winter) will encourage new growth in spring and summer as the stored energy is still in the roots and trunk. Summer pruning is used to clear away excess foliage from around fruit and can also be used to take some energy out of a tree that is too vigorous. I have a golden russet apple that needs that because it explodes with growth each year and would otherwise become unmanageable if I did not take some of this excess energy out.
      Also, major pruning to shape a tree should be done in late winter.
