    I bought a 70 dollar bread maker and I use only the dough function. It does the first rise also. Then I take it out and put it in a pullman pan and let it rise for 45 min- 1 hour and bake. Makes fantastic sandwich bread. The pullman pan comes from usa pan also. Love it.

    New subscriber here. It is so refreshing to see your excitement about grains! I have been milling my own grains (off and on through the years) all thanks to the Bread Beckers, as well. They are about 2.5 hours from us and I have been fortunate to learn from Sue personally...she is a wealth of knowledge! Many of their classes can be found on video via their website under the Video and DVD section. A few are on youtube, as well.
    For those living in the South, the Bread Beckers have drop off options similar to Azure Standard quarterly, which saves substantially on shipping. Keep up the good work...your videos are a breath of fresh air😀

    Girl, I know this is a few years old now, but I give you so much credit for having a big family, and being busy with your business. I found your two Nutrimill videos, when searching the Harvest option, since the Mockmills aren't available for another 2 months, with raw components in the supply chain issues. You have so much energy, and covered a lot of territory in both vids. Thanks so much! Do you find the Harvest not grinding your grain fine enough? I see this as the main complaint, for bread baking.

    That book is INCREDIBLE!!! I think every home maker, home schooler, home skills class, and young person in health class ought to read that book/own that book. EYE OPENING!!! It’s practical! Useful! Educational! Full of information that certain orgs would prefer to have forgotten. Love that book!!!!!

      P.S. I have same fancy grain mill on my counter, only black. I liked your idea to only grind enough grain for whatever recipe you are doing at the time. Limits extra flour to store. The whole grain “berries” look great in glass canisters in my pantry. My family gets the fullest nutrients (aside from actually growing & harvesting ourselves) from grain as possible. Your comparison Video was great help in deciding which mill I should buy.

    I just found your podcast last week which led me to your RUclips channel and I am so grateful I did! You are awesome and share wisdom about all the things I'm interested in as a stay at home mom! This grain idea has got me really excited to learn more and adapt this in our own family! I love the homesteading idea of doing anything I can myself vs store bought.     I have this book, too. My husband thought I was a little nutty when I started buying several types of grain & a flour mill. Then I started telling him about the grains. He’s taking it pretty well. Now he thinks it’s great that no matter what, we’ll eat well.
    I think the problem people are having with wheat is they’re consuming flour that has zero nutrients. It might have had nutrients when it was ground but flour loses its nutrition just days after being ground. By the time commercial flour is bagged & shipped to the store, the consumer is eating a bag of powder that is basically worthless. They blamed gluten. But then the "gluten intolerant" ate "ancient grains" & found they could eat ancient grains without any problems. But wait...... ancient grains have GLUTEN! If they were truly "gluten intolerant", then they would have a reaction to gluten, whether it’s in modern wheat or ancient wheat.
    I’m sorry. I get on a tangent when I think of all the whiners. They don’t realize the commercial flour in the stores is so far removed from what it should be. The grain millers have refined the wheat & threw out 2/3 of the product to create "All-purpose" flour. I could go on & on but I must stop. People, read up on how flour is produced. You’ll be surprised.

    I appreciate you sharing this. I'm interested in long ferment times for dough. The enzymes break down the antinutrients ... similar to sprouting grain. How is your sourdough adventure coming?

    I live in Ohio and order from country life natural foods which is out of Michigan and goes out to Missouri and down south. They have a delivery route on their site, I have to meet the truck, a couple times been able to deliver to my house. They have great prices and you can also order from their sister company things they don't carry and it is something better natural foods

    Wow!!! This was such an answered prayer for me, my family eats mostly paleo but I know bread has the potential to be extremely nutritious I just had no idea how because it is so different than it used to be!! I’m definitely going to start doing this. This is fantastic! I am so excited!

    I just bought a refurbished pasta maker at Amazon after hearing you talk about it and love it. I used to make pasta (w/ a KitchenAid attachment) before we had kids but haven’t had time since. Making the pasta wasn’t too bad by hand, it was the mess it made. You can’t make spaghetti with the kitchenaid attachment but you can make all sorts with the Phillips, including Asian noodles which is what sold me. I can’t conveniently buy fresh udon near me but now I can make it. My kids LOVE this machine and I’m looking forward to getting a grain mill so the pasta is healthier (my kids live on pasta whether I like it or not). I’m looking for recipes for the Philips machine that include more veggies in the pasta than just what’s in the cookbook, so I’d love a future video about that. Thank you so much for sharing how you do this. I’m in a similar situation with a business and little kids but I only have two so I know if you can do it, it’s possible for me.

      Woohoo that's awesome!! I think if done properly, pasta can be a great addition to dinner and doens't have to be unhealthy!! :) You will LOVE doing freshly ground grains. It's actually so so easy. Good idea, I'll have to add a pasta video soon :D

    Can't wait for this new series! I would love to see how you incorporate fresh grains into desserts like brownies, cakes, cookies etc. I like to make those things for church functions or giving to friends plus we occasionally like something sweet at home. Obviously the box mixes are not healthy, but they are super easy to have on hand.

      Since you have to add water, an egg, oil, etc to boxed mixes anyway, learning how to make them from scratch and keeping those items on hand isn't hard at all! Once you get into the swing of it, it's very easy (and delicious)!!

    Spelt is actualy a grain, which is crossed with wheat in modern production. Only if you use the real old ones, it isn't crossed with wheat. But einkorn is superb. Even emmer is an ancient grain.

    Love that shirt on you! Does Sue Becker's bread book discuss using a bread machine with the recipes in her book or would I be on my own figuring that out?

      aww thank you!! :D She does talk about how to convert some of the recipes in general to a bread machine but she doens't list the directions for each and every recipe in a bread maker. She does give good advice on the topic though :D

      Thank you, I never liked how my bread turned out with my milled flour, then I found Azure sold a bread machine mix, it was amazing! Still not as fresh as freshly milled but at least everyone ate it. When Azure discontinued it we were so disappointed. So now, you've inspired me to pull out my mill and all those grains I have in storage. I'm going to try it again. Thank you again!

    Pasta machine: I had one but the pastas didn’t hold their shape even if I used durhum wheat flour... what flour do you use? Did you try with spelt flour for stealth pastas? I really would like to see a video on this topic, if possible. Thank you! Oh! And when you mill your grains, do you have to siffle them?

    If the flour oils go rancid in a few days, does that happen in the baked goods? Do the baked products loose nutritional value in a few days? Does the heat of baking destroy the nutritional value by denaturing the oils?

    Hi Jami. I heard this episode via your podcast and loved how you strongly mentioned that people who are gluten free should really grind their own grains. My only concern recommending spelt and einkorn as 'gluten free flours'. Although they may be different, they still have gluten in them and the Celiac Disease Foundation has stated they are not safe for Celiacs or people with strong gluten intolerances. On that note, thank you for providing the disclosure for Celiacs :) I'd love to know more about your experiences with gluten free flours. I heard you mention Amaranth. Have you tried buckwheat, potato starch, or rice flours? What's a good resource for Celiacs on grinding their own flours?

      Megan Ramsey I didn’t say that they are gluten free rather that they have a different gluten structure so many who have a gluten intolerance can sometimes handle them when they can’t handle regular wheat :) celiacs still would not be able to handle

      I don’t use rice or potato starch as there are so many other great grains out there! I do use buckwheat and there are other fantastic gluten free grains to explore as well! But I’m not an expert at all when it comes to gluten free grains because my family doesn’t have to be gluten free. So I woke do some googling on the topic! :)

      Komo grain mills have a gluten free insert do that you can grind non-gluten ingredients without cross-contamination risk.

    This is great! How do you store your grains, specifically the large quantities? I recently started grinding wheat as well but I haven’t found a good way to store the 50lb bags.

      Lisa S food grade buckets and lids you can normally get at Walmart bakery for free or $1 and they are a great food safe storage option

      Yes! I store them in food grade 5 gallon buckets with swivel top lids. The swivel top lids ARE more expensive but so so worth it in the long run because they are incredibly easy to open, even with one hand!

      You can do oats and corn. I'm not sure if the flax is too oily

    Do you make a 1 or 2 lb loaf in your bread machine? I make a 2 lb loaf in my Zojirushi and it’s just so tall and huge!

      2lbs which I love because it makes the huge loaves! With the huge slices, I just find that the kids eat less slices overall. The bread still takes delicious!

      yes! The flour functions basically the same. Freshly ground flour soaks up a little more liquid so you might need to adjust liquid a bit sometimes :)

    Awhile back you had recommended Craftsy as a website to invest in learning more cooking/baking skills...now that some time has passed do you still consider this website to be a good resource? Thanks!!

      Yes! Depending on what you are wanting to learn :) To my knowledge they don't have anything on grinding your own grains or baking with freshly ground grains. A great free research (although their website is a little funky to search through) is BreadBeckers.com. They offer a ton of awesome FREE baking videos :D

    You have 5 kids!!! Do you know that in about 30 years the population of the USA would duplicate if all the people did that? In 60 years, the population would quadruple and in 100 years it would 10 times more than now... By then how could we cultivate biological whole grain for all those citizens? I think that you would pray to God to send the grain from heaven...

      Nope we have 6 kids and so glad for it! The birth rate is rapidly declining. In fact, we may very well be headed for a population crises if people don't start having more kids again.
