Back in the 90s I tried making stuff similar to that. But nowhere near as complex or computer like. I mostly used TTL logic to create counters, calculators with BCD switches for input and 7 segments for outputs. My most complex which was a frequency counter that could also determine wave form(sine, square, saw) was about 1/10 the breadboard real estate of yours. I have often wondered if it would even be possible to build the breadboard equivalent of a system on a chip. I guess it would be but it would be a mammoth undertaking.
Well done on this. Very interesting.
