    Goat Shank Nihari is a traditional South Asian stew that is particularly popular in Pakistan and North India. Nihari is a rich, slow-cooked dish that is typically made with beef or lamb, but the goat shank variant is also highly cherished for its unique flavour and tenderness.
    Here’s the detailed recipe-
    INGREDIENTS & INSTRUCTIONS-
    Ingredients:-
    For Nihari Masala:
    Coriander Seeds(dhaniya)-1 tbsp
    Fennel Seeds(saunf)-1 tbsp
    Cumin Seeds(zeera)-1 tsp
    Caraway Seeds(shah zeera)-1/2 tsp
    Black Peppercorns(kali mirch)-1 tsp
    All Spice(kababchini)-10 nos
    Long Pepper(peepli)-4 nos
    Cardamoms(ilaichi)-2 black & 6 green
    Cloves(laung)-5 nos
    Cinnamon(daarchini)-1 inch
    Nutmeg(jaayfal)-1/4 piece
    Mace Flower(javitri)-1 nos
    Star Anise(chakrfool)-1 nos
    For Cooking Nihari:
    Oil-1/2 cup
    Ginger Garlic Paste-2 tbsp
    Goat Shanks(nalli)-3 nos or 750 grams
    Kashmiri Chilli Powder-2 tbsp
    Red Chilli Powder-1 tbsp
    Dry Ginger Powder(saunth)-1 tbsp
    Turmeric Powder(haldi)-1/2 tsp
    Salt-as per taste
    Nihari Masala- 4 tbsp
    Ground Birista(tali hui pyaaz)-1 medium onion
    Water-1 litre
    For Slurry:
    Water-1 cup
    Wheat Flour-1/4 cup
    For Garnish:
    Julienned Ginger
    Chopped Green Chillies
    Chopped Cilantro
    Lemon Wedges.
    Instructions:-
    1-Preparing Nihari Masala:
    •Add all the spices mentioned above in a grinder jar and grind to a fine powder.
    2-Course Grind Onion:
    •Add Birista or Fried Onion in a grinder jar and grind coursely.
    3-Cooking the Nihari:
    •Heat ghee or oil in a large, heavy-bottomed pot. Add ginger-garlic paste and sauté for a few minutes until the raw smell disappears.
    •Add goat shanks and sear on all sides until browned.
    •When seared remove the shanks from pan and set aside.
    •Add the Nihari masala and powder spices. Cook for a few minutes until the spices are well combined and aromatic. Make sure not to burn them.
    •Add Ground Birista and water. Stir and bring to the boil.
    •Then Add the Shanks, Cover and let it simmer for 2-3 hours on lower to medium flame or until the meat is tender and falling off the bone.
    •Uncover the pan and turn off the heat. Remove all the Oil/Rogan floating on surface and set aside.
    •Dissolve the Wheat Flour in water to make a smooth slurry. Add this to the pot to help thicken the gravy.
    •Cover again for 2 minutes on lower heat.
    •Check the seasoning and adjust salt if needed.
    4-Serving:
    •Serve hot and garnish with Rogan, chopped cilantro, julienned ginger, chopped green chilies, and lemon wedges on the side.
    •Serve with Hot Tandoori Roti or Naan.
