how do i get my noise patterns to always fill like in the video? sometimes ill be left with a block not in my pattern (presumably because the value in the noise is 0)
Yup, if you don't want any holes you need to make sure that all the percentages add up to 100% - Let's say you are using 4 different blocks in your pattern, they could have 25% each.
