- How to make a Chocolate Mousse Cake?
2 Sheet pan: size is 9x13"
Baking time is 20-25 minutes
Here's what you'll need:
sugar 2 cups (400g)
all purpose flour 2½ cups (312g)
cocoa powder 1 cup (118g)
baking powder 2 tsp (10g)
baking soda 2 tsp (10g)
salt 1½ tsp (8g)
3 large eggs
oil ¾ cup (180g)
milk 1½ cup (360g)
vanilla 2 tsp (10g)
hot water 1½ cup (337g)
CHOCOLATE MOUSSE RECIPE:
(Chocolate ganache: 2 cups whipping cream + 500g of chocolate chips)
2 cups cold whipping cream (464g)

I made this cake today. Followed exact measurements in grams. I did add 1/4 cup confectioners sugar to the whipping cream to make the mousse sweet. It’s quite a big cake. I cut mine into smaller pieces and was able to get 12 rectangles out of it. You don’t want to eat large portion as cake is very rich. I’ll be using this recipe everytime. Thank you very much. Can I ask? Is this just right the sweetness? Did you used Chocolate chip semisweet?
I made this cake yesterday for Iftar for guests. A few recommendations based off of what I have learned in the process:
•use 2 eggs instead of 3. It tasted very eggy & guests weren’t that fond of the strong egg taste.
•add some instant espresso powder to the 1.5 cup of hot water the recipe lists. It’ll add great depth to the chocolate flavor.
•before putting in oven, tap the baking tray on the counter to let out any air bubbles. Otherwise the cake will deflate like a bad soufflé bc of the air bubbles when it cools.
•do NOT add the ganache into the whip cream if the ganache is even slightly warm!! Cool completely to room temp first. Or else your whip cream will deflate & the mousse will not form no matter how much you whip it. It’ll ruin your mousse-even after refrigeration, I couldn’t bring the mousse back to life 😭
•wait until your cake cools thoroughly before assembling. This is common sense, but my guests were on their way & I assembled it quickly when the cake was still warm & the mousse deflated ever further.
Although eggy & deflated mousse-like. This cake still tastes pretty darn good. I will make it again & fix the mistakes I made & add 1 less egg & keep you guys posted.

I Just made this and correctly measured everything out. The Ganache was runny, I added an extra hand full of the chocolate chips... still too runny... I would recommend that anyone making this should use the given measurements as starting point but to eye the cream into the chips until you get the correct consistently (I just combined them both at once) I'm lucky I had extra chocolate chips on hand to save me! Great recipe overall :)
Ganache was too runny with the mentioned measurement and ruined cake😔😔😔😔

I made this cake and it was a hit! I have become a little bit better than an amateur baker because of these recipes. I was actually able to make 2 9inch round cakes with this recipe. I suggest to all other bakers to really watch your cake when it cooks. Maybe check it 5-10 minutes before the recommended baking time simply because ovens bake a little bit differently despite the temperatures being the same. Toothpick test is always useful (stick the toothpick/skewer in the middle of the cake. Cake is done when the stick comes out clean). If the stick comes out and there’s still batter that sticks to it, add another 5 minutes at a time.
Going back to this cake, it’s a pretty big batch. I layered both of the 9 inch rounds. I used cake collars to keep the chocolate mousse neat. In a very warm environment, better to put the chocolate mousse in the fridge until ready and make sure the cake is completely cooled. After I assembled the cakes, I put them back in the fridge to let the chocolate mousse set. The cake came out moist and the chocolate mousse was just delicious. Sooo good!🤤

Was going to make the whole cake but I'm out some of the ingredients, so I'm using a boxed devils food cake mix and using the same technique for the mousse. Probably won't turn out as good but I hope to tastes good anyways!

I made this for my son's birthday and I over-whipped the cream. My cake looks like it was a disaster, good thing it tastes better than how it looks 😂. Thank you for this recipe. I have to practice more though.
Did you use natural cocoa powder or Dutch processed cocoa Powder?
@@noshintasnim3205 I just used the Hershey's cocoa powder, I have no idea what kind of cocoa powder is that but it's the only cocoa powder that I could find from our grocery store 😊
Did the chocolate chip has to be semi sweet or sweet n flour measurements plz thanks.
@@judielin8031 Hershey's is American natural coca powder not processed. It has a waxy taste to it but still many people like it n it is pretty famous in my place as well.

To enhance the flavour of the cocoa powder and cocoa powder absorbs water making the cake dry..
Cocoa needs to bloom, hence the hot water

Are these measurements equivalent to what it would be in the US? I know how to bake + followed the recipe exactly. Yet every step did not look like the video, and it turned out to be the biggest disaster.

Finally an easy method of making mousse. I usually buy the instant pudding or those snack pack puddings and fold it into whipped heavy whipping cream. I'm so excited to try this method with the ganache. Also i was wondering for the remainder of ganache left for the topping, it looks like you just left it out at room temp? 🤔 Or did you refrigerate it? Thanks a million.

Always follw in grams, cz its a standard meaurement, but cups may varies home to home
