5 scoops of cement strait into bucket, fill with sand is a good easy mix. Same for concrete mix.

I like the curry stainless short shank for finish plaster. It has lots of flexibility

That’s a great question. Be very careful to cut off all the fat before you apply your finish. Look at it from the side if you can to be sure.
There won’t be a crack because the wire is tied really well to the old and new. The patch is feathered in well
