Good report! I flew Eilat to Sde Dov a few years ago on an ATR-42 of Israir. I've been to Eilat a few times - I don't know how you survived for six months - it was so hot in July:August that it was unbearable. Other than the heat in summer, it's a great place!
I think B757 is the biggest aircraft which is capable to land at Eilat airport. Arkia usually operates smaller ATR-72 aircraft but probably demand is high for the route. So that they operate B757.
there are also 737's and airbus 318-320 the 757 is the most comfortable aircraft for this route and also the safest btw, this landing was the worst of arkia
No, 757 certainly isn't the biggest AC for Eilat. Back in 1969 the runway of Eilat airport was expanded from 1,500 m to 1,900 m which rendered it suitable for landings of Boeing 767-200's and 200ER's. Back in the 90's as a kid I witnessed a 767 landing In Eilat (of some German charter company, Naturally I can't remember which...). I know that the 753 is particularly long and thus is comparable with the 762 in pax capacity but the 757 isn't a wide-body AC like the 76 nonetheless.

I'd honestly hesitate to fly on ATR planes. Boeing is safer I think even old ones. Yeah summertime in Eilat is so hard to tolerate.
