      @@DANFELLOWScoffeecocktails so using fresh coffee; I used 50g of espresso grind to 120g of cold water. Let it soak for 12hrs. Added 150g of natural sugar mixed well, let it rest for 8hrs. Then using a dropping filter, I ran 400ml of Vodka, 100ml of everclear (95% abv) through the oleo. The result was pretty good and I think I extracted about 80-85% from the beans. I don’t have a good way to measure the brix/abv as its sugar alchohol and water mix. Yeld was just under 500ml and It has a liqueur level of sweet/hotness. I’m guessing about 45% ABV. It actually tastes better than the original beans, (I used some stuff that was ok, but not my nice stuff). I’ve got some spent pucks that I’ll experiment on next time but honestly it’s going to be hard to beat. This isn’t practical in a bar but I think realistically you can do the initial soak with 150ml 90F water in about 10 minutes, then drain the excess, press the puck (i use an aeropress) and add sugar and get a oleo in 2ish hours. Reduce the vodka by 1.2x the expressed coffee liquid and then add in more everclear to get the initial volume up to 500ml.

      Maybe also swap the vodka for a dark rum like Jonathan’s Curse.

    I had the opportunity to taste Discarded products, they are not great. Many distilleries are doing these kinds of things, like using only fruits that don't look so nice for a supermarket but still have all the flavours in them... I'm just going to say my piece with this idea... It's cheaper for them, that's why they're doing it, it's a company, and their main focus is profit with the least amount of money spent... discarded fruits, and such... they're not saving the planet, these fruits would have become just compost... or would degrade naturally, this is just fishing for brownie points among customers who think they can change the world by buying certain products...
