☕️+🍌 BANANA PEEL SACCHARUM ♻️ and a Zero Waste Coffee Cocktail ‘PUCKS + PEELS’ (Episode 1/3)

  • This is the first episode in the ‘Coffee and Banana’ series where I push the boundaries of ingredients and their by-products to make delicious drinks, reducing or eliminating waste.
    First we make Banana Peel Saccharum from leftover banana peels, followed by a Zero Waste Coffee Cocktail inspired by one of my favourite desserts in the world, called Pucks and Peels (made from leftover coffee / espresso pucks and banana peels)!

    Ask your local coffee shop to put out their coffee grounds for sprinkling on the compost heap (never on the garden).

    I love bananas and coffee. I just created a bananas foster latte for a seasonal special where I work. It was super popular

      That sounds interesting. Care to share how you incorporated the banana? I know this is an old comment but I thought I'd try asking.

      @@claytor920 for the cafe, monin makes a banana puree sauce and I mix that with caramel. But you can caramelize bananas in sugar on the stove then blend and stain out the checks if you want more control of the caramelization

    This can be totally zero waste, the spent banana peels can be baked on low temp till crisp to make candied banana peel to snack on or use as garnish! They taste really nice.

    So excited to watch after seeing your take on Parmesan espresso martini. Love banana flavor and seeing things like banana coffee in the anime Tower of God had me trying to infuse with banana peel+meat 😂. 1 min in I already know you’ve done a better job

    I do a banana oleo saccharum and coffee grounds cocktail too! Since the cocktail "Monkey's Lunch" is based around Kalhua and Creme De Banane, we call ours the "Monkey's Trash". It's, uh, a little less sophisticated than your take. I gotta give your take a go one of these days.

    Hey Dan! With these saccharums, how long would you expect them to last? I'd love to experiment, but worried that they would go off or worse if I didn't use quick enough!

      Thank you! With the addition of alcohol, I have had mine in the fridge for a few weeks, but the Banana Saccharum especially is best pretty quickly! You can make really small batches very easily though, which should avoid waste.

    Does the syrup itself freeze well? Could be easier to make a larger batch and only use smaller portions at a time, similar to how super juice freezes well.

      I haven’t tested this specifically, but I expect it would freeze fairly well.

      Only a couple of days really, but you can make a super small batch size to avoid any excess or waste 🙂

      @@DANFELLOWScoffeecocktails I was thinking if you put a couple of drops of citric acid solution which is a natural preservative, wouldn't it live a bit more?
