Could you include more clips of what the consistency should look like at each step? I’m about to start my long ferment but I think my batter might be too runny…
Hi, are you fermenting at room temperature or in the fridge? And, to use my discard: how old can I still use the discard, is for example 1 month old ok? I am understanding that the discard substitute the starter and the flour is left as is, right? Thank you for your recipe and your comments.
Will this recipe work without the baking soda and baking powder? Could the starter be enough on its own to make the muffins rise?
