How to get the right Royal Icing Consistency EVERY TIME! - ROYAL ICING 101

  • How to nail Royal Icing CONSISTENCY to decorate cookies, cupcakes and cakes.
    Icing consistency is the key factor to your success or failure as a cookie decorator. When your icing consistency is 'on-point' you will find cookie decorating to be enjoyable and very satisfying.
    On the other hand, if you get the wrong icing consistency it will frustrate you to no end.
    So how do we nailed that icing consistency to make cookie decorating enjoyable?
    Let me just say that there is no right or wrong way of doing this, I am simply showing you my method on how to know when your icing has reached the correct consistency to use for different aspects of cookie decorating.
    In this video I will show you 4 different icing consistencies:
    1. Stiff consistency - this is usually how the icing came out of the mixer.
    2. Outline/Piping consistency - used for outlining or piping little details or for writing.
    3. Medium consistency - this is the consistency we used A LOT, usually to create dimension as well as to decrease prep and decorating time (making 1 consistency is faster than making up two different consistencies) and best of all, its also handy to prevent cratering when filling small spaces.
    4. Flood consistency - used to fill/flood large areas in cookies after outlining.
    Hope this video is helpful for you, specially for those who are new to cookie decorating. Like i said in the beginning, nailing your icing consistency is truly the key to successful decorating.

    Hands down the best video on royal icing consistencies. I’ve seen other RUclipsrs say you’ll “figure out” the consistencies as you go along, but that is very ambiguous for a newcomer. Thank you for the time and effort you put into this.

    I have come to love your channel and want to put all my knowledge to use but where I am in Jamaica, certain tools aren't readily available such as good quality gel food coloring. Do you think that wilton is a good brand as americolor is a bit out of my buget right now. :)

      Thanks Maria, I havent found any difference regarding colouring the icing before or after....however i personally prefer to get the right colours first before adjusting the consistency 😉👍

    Thank you! I’ve tried for years to get this right. I’ve followed other online instructions that just haven’t worked for me. Even though my icing is a little different (no eggs, no powder, just confectioner’s sugar, milk, almond extract and a tiny dash of Karo to harden up the icing after it’s on the cookie) all of this still applies.

    If it has softer than it’s needed and I add more confectioner sugar, will the color change?

      Hi Maria, adding confectioner sugar to make the icing consistency thicker/stiffer will not change the colour...unless if you add LOTS of it 😁👍

    This is an excellent tutorial... What is cratering... you refer to that when you are talking about medium consistency...? Also, on your christmas cookie tutorial, it looks like you outline and flood with the same bag ( which also looks tipless..) Am I seeing that correctly or was that an edit that I missed... your work is just fabulous!

    I came back to watch this again, and I am a bit confused about the difference between "medium" and "flooding". It looks like they were both for flooding. Can you clear this up for me? Thank you!

      Hi Deb, both "medium" and "flood" consistencies are to fill the cookie however the medium consistency is thicker so it stays on the cookie without going over the edges if you want to use one consistency to outline and fill the cookie. Flooding consistency is thinner and you need to use outline consistency around the edges of the cookie to prevent the flood icing to go over the sides of your cookies. I hope that helps 😉💖

    What is the best icing consistency for writing ? I’m new to royal icing

      hiya, i usually use outline consistency icing to write, but most importantly i use PME Tip# 1.5 for writing as I get much better control with that piping tip. I think its a special writing tip design to make the icing flow better, if you haven't try it yet i would highly recommend it 😉👍💞

    Hi..Where do you put the mixed royal icing sugar while waiting the previous one to dry out?(which one on the cookies)And the freezer you mention in others video, is that the place we freeze the ice or just the place we put vegetables?

      hello my friend, when i mentioned "Freezer" that means it's the place where you make your ice to freeze and when i mentioned "Fridge" that is the place where you put your vegetables 😉💖

      @@hooifunglye2420 if you are only waiting for short time (30-60mins) then put it into the fridge, but if you are waiting for a few hours or sometimes overnight (specially if you don't use a dehydrator to dry your icing) then put them into a ziplock bag & into the FREEZER. When you are ready to go to the next step of decorating, take your icing out of the freezer, let it thaw for a few mins at room temperature and then you can start using the icing 😉👍

      Hi Doris, my icing recipe is using egg white and not merintgue powder. If you want to make royal icing with meringue powder I would highly recommend using Sweetopia royal icing recipe which specifically formulated to use meringue powder. you can find her recipe here: sweetopia.net/2012/01/royal-icing-recipe-free-illustrated-recipe/ Hope that helps

    Oh thank you! This has helped a lot! I have improved my technique with different consistencies but i am gonna try this way. Btw, hoy do you get that shiny finish on your icing when it dries? My cookies always end up matte

      Hi Andrea, glad the video helped you with your icing 😊i think my icing also dries matte, but when we use fresh new icing it has that smoother look on it. Some people have tried adding a little bit of corn syrup to get that shine, but unfortunately i haven't try it personally myself, you could give it a go and let me know if it works well 😉

    For piping edges, lines, and lace, what consistency would you recommend? What about for brush embroidery? Thank you!

      Hi Fallon, I use outline consistency icing for edges, lines and brush embroidery. I'm not sure what kind of lace are you referring to because I posted a tutorial on how to make 'eyelet lace' and i used outline consistency to outline the design and i filled it with a really runny consistency icing to create the translucent look...but i have a feeling that is not the kind of lace you are asking here? 😋

      Yes I certainly did, I'm a self taught baker and I learned everything from watching RUclips tutorials when first started and then just a gazzilion practices, I learned lots from my mistakes along the way 😁😍

      Hi Charlotte, i got mine from my local homeware store in NZ called Briscoes 😋I like a bowl size that can fit in my palm comfortably as i spend a lot of time mixing my icing into different colours so it needs to be the right size for my hands. I would recommend going into your local homestore and try them out in my your hands before buying them. I dont like the bowls without any holders at the bottom as i prefer to grip the bottom part of my bowl as i mix my icing. Hope that helps 😉💖

      Hi Lizette, if it was me making the Cap America Shields I would use medium consistency for all the sections because of the small sections the medium consistency will help prevent craters in your icing. I would love to make it too and share the videos but unfortunately with my current commitments it is likely that I'm not going to be able to do it for a while....but let me know if there is any other questions you need me to help you with 😉💖
