There is quinine in tonic which gives a bitter taste, maybe that's why it goes well with coffee better than soda. Try adding abit of sea salt to the drink, works wonder :)

Soda water works well with other drinks like tea etc. For some reason we did not like the soda coffee. For me it tastes more like the Nitro coffee which I also never fancied :-)
