The dendrobium cuttings survive for a very long time because of the stored nutrients and energy within the cut stems. Sort of like the function of bulbs on all bulbed orchids like Oncidiums, Ondotoglossums. This stored energy and nutriets are used to grow these baby (Keiki's) orchids from the "eye's" on the nodes of the cuttings. What I didn't show this the spray I use to keep the cuttings moist. A mild growth hormone spray that has two different natural growth hormones and I also add some kelp which as a third growth hormone. These stimulate the "eye" which occurs at the nodes to grow.
my cuttings are going yellow. They are in sphagnum moss which never seems to dry out, what to do?????? They are Red Emperors so really have no others and cant lose them. A couple of keikis only so far.
I water on a regulator schedule depending on the weather. So no difference. I usually water by wand once or twice a day. But when fertilizing the entire pot is submerged.

At least two months or more. Moisten the sphagnum Moss and let it dry completely before moistening again.
Can you plant with old cane ?
I do not see why not? As long as the cutting is healthy.
Can you use the cuttings from the flower stem part of the dendrobium where the flowers grow (so not the cane part.)?
