I agree with you with the complexity/lack therefore of songwriting. One of the basic tenets of my band is starting out with a rocking basis and then layer, layer, layer, layer..and while you're at it...layer some more. No one single instrument/vocal has to be complex but building up the layers so that the whole sounds/feels more complex is the way my mind goes at it. I feel that it generally makes the song feel more accessible without being too simple all together and feel like you're pandering and/or being lazy.
