If you had a mount it a pivot that could be aligned perpendicular to the solar path, you could just simply pivot it without having to re aim. You could even have a clockwork mechanism to have it track automatically.
Now all you need is a system to block the sunlight "when and if" needed.Nobody disputes the power of sunlight, but few really address the dangers involved with looking at the sun, which in effect you are doing when you walk up "unprotected".. But its easily solved with a fabric "flap over cloth". The really ingenious will sew a magnetic strip into the bottom of the flaps to make them more secure to each other
Maybe it would be a better idea to paint the back of your parabolic reflector with non reflective coating so that the person standing at the back of the cooker does not get the reflection (glare & heat) from the sun.
This is a small cooker; only 26 inches across. I have not had any reason to stand behind it and cook. The sun reflects to the cooking area from all sides. It does not just heat the bottom. It concentrates the heat around the cooking pot, not to a single point. Retention, as explained in the video, is the purpose of the polycarbonate clear cover. I have yet to try heating a frying pan and cooking that way. But should I do that, I probably would not stand behind the thing; I would stand to one side; and wear dark sunglasses. Yup.
This is a parabolic-ish design. The heating area is smaller than that on a panel or box cooker and the light is more concentrated. I would recommend a panel type of cooker or a box cooker (leave the door open to reduce temperature. Both will hold stacks of dehydrating racks. Hope this helps

Good point. However, if the cooker is in focus, the back side of the cooker will always be in shadow
