The darts that took down Appa were shirshu darts. Nyla was the one who rode the shirshu, a large, star-nosed mole-like mammal that has no eyes and thus relies on its highly specialized sense of smell. It's tongue paralyzes people, hence the reason why Appa went down like he did.
