    Doesn't an aluminium tray reattach with the salt etc

      It worked out fine for me, but you can line the aluminum pan with plastic wrap as well.

      Olive oil, kosher salt, course black pepper, rosemary, thyme and minced garlic.

    Good morning my brother you shouldn't use a metal pan. Only Glass. Pelico should be at Room Temp uncovered fish in Frigerator can be dangerous. It's already Brined room temp can develop Pelicle since your smoking it. Otherwise Great job! Be Blessed 🙏

      So just for clarification,, once brined you can leave it on tray on counter uncovered to develop pelico correct
