  • Mary Berry's Queen of puddings was the sixth technical challenge in The Great British Bake Off (GBBO) Season 3. This is a retro British pudding of custard, cake and jam topped with soft, chewy meringue.

    I was so inspired by GBBO that I wanted to try all the technical challenge recipes.
    GBBO S03E06 - Puddings week - Mary Berry's Queen of Puddings
    Ingredients
    -----------
    For the base:
    1. Full-fat milk - 600ml / 2 cups
    2. Butter - 25g / 1oz , plus extra for greasing the dish
    3. Lemon - 1, zest finely grated
    4. Caster sugar - 50 grams / 2oz
    5. Free-range eggs - 3, yolks only
    6. Fresh white breadcrumbs - 75 grams / 3oz
    For the meringue:
    1. Caster sugar - 175 grams / 6oz
    2. Free-range eggs - 3, whites only
    For the fruit jam:
    1. Fresh mixed summer fruits - 200 grams / 7oz OR
    Frozen fruits - 500grams / 1lb & 2oz OR
    Alternatively you can use raspberry jam if you prefer
    2. Caster sugar (or to taste) - 200 grams / 7oz
    To serve:
    1. Pouring cream
