Caged hens are usually tricked into laying more eggs and might be low in calcium because of that and poorer nourishment, which makes the shells thinner. That might make a weight difference in the shell itself. Maybe just a few grams, but it might.
I was amazed that the shape of the two were so different. The steep looked like it was made in a artisan bakery. The cheap looked like a mass produced cake.
Yea same. I enjoy the cheap vs steep videos. But perhaps a point should/could be made by Barry to still take the welfare of the animals in mind during these challenges, even if it means that the "cheap" will be a little more expensive.
This argument was what made me plant based. I realised the hypocrisy between choosing only free range eggs while still consuming animal products. I don't really understand how anyone can approve of battery farmed hens though, it really is horrible and the product is of much lower quality.

Weigh the eggs without the shells, my daughters organic eggs are almost orange looking, and it makes a super yellow cake. Those look really good, love lemon cakes.
Here in Germany I get my eggs fresh from the farmer and they are always orange to dark orange. My dad came over from the US and called me over when he was whisking eggs for a scramble and said that the eggs were bad. He had only eaten store bought eggs that are yellow. He loved the taste of the farm fresh eggs.
Also, goat's milk and cow's milk have distinctly different tastes. I would guess that might be true of the butter also. (I prefer goat cheese to eat but cow's milk to drink).
Hey Barry! What you're seeing there in that orange egg yolk is carotene.! As long long as I know it's the same componant that carrots has. And they're feed the chickens with food wirh added carotene powder. Explaines the color of the yolks. Keep up the kitchen gadgets videos. I enjoy them so much.

Thank you for the recipe, I'm going to have a bake off against my usual lemon drizzle recipe, which has more flour, uses baking powder, and has milk. I hope your recipe is better, mine is too complicated. Can I also make a suggestion? Zest 1½ lemons not one, and spinkle the ½ zest over the cake before drizzling. If you sprinkle mostly in a circle near the middle of the cake, it will cascade down with the drizzle when it, er, drizzles - it looks epic and your diner can see that there's zest in it before taking a mouthful.
Cheap vs steep chilli cook-off. For cheap you use standard store brand chilli powder and for steep you'd have to use real dried chillies and reconstitute them for the sauce. Cheap veg vs organic for the base. Cheap tinned tomatoes versus expensive Italian tinned tomatoes, Cheap mince versus finely chopped expensive steak. Etc. There will be a taste difference, you will need to decide whether it's worth it. You'll have to get access to a few different kinds of dried chillies. Might be a bit tough in the UK. I've made chilli lots of tomes going both the cheap and quick and expensive and more rime consuming route. I enjoy these videos and it is great that Mrs. B and the kids are so enthusiastic to get invilved.
With the butter, apparently cheap standard puts color in during the summer as well as the winter, whereas organic does not color in the summer because the cows are feeding more from the grass and therefore the butter is not so enemically colored in the summer. Its the same here in Canada, all butter is not colored in the summer here, because outdoor cows mean yellowy blonde butter, but in the winter they color it so that it does not look the almost white that it would look like otherwise.
I always use free range eggs and I believe the use of golden caster sugar made a difference, but I absolutely think decent lemons would make a big difference.
I can't tell - are the posh lemons unwaxed? and the cheap ones waxed, cause that'll make a difference to how your zest tastes if you didn't scrub the wax off.
The colour of butter can change with the seasons. The butter from goats can be as white as snow, when on dry feed in summer. (Australia). Develops a more yellow colour when fresh grass is available. I think most butter is coloured to a standard, just because we think that it should be yellow. Cage eggs are not my preference, however, they can put food on a plate for a family in poverty. Better that 6 eggs are available for 6 people, than 1 egg between them. Just a thought.
I generally prefer steep in the understanding that the ingredients are of better quality however some of the simplest things are the best. So it's personal choice
For future, when you measure eggs by weight for baking you should weigh them in a zeroed out container without the shells, as the shells can be different thicknesses and thus different weights but then you don't put the shells in the batter so you have broken your equal math. :)
One thing I don't always like about the cheap vs steep. Is that you go for cheap meats and in this one especially, the cheap, caged eggs. I understand it's part of the challenge and "battle", but animal welfare should perhaps be a part of the challenge, even if it makes the cheap a little more expensive.

Both of those cakes will be greatly improved with being wrapped and left to ‘mature’ for a few days. They will improve in flavour & moistness I feel under no circumstance should you ever buy barn eggs, the horrendous conditions should not be supported

I used cheap flour to make scones once, they tasted like a bag of flour. I used an expensive flour for the same recipe and they were delish. I'll never use a cheap flour again lol
I’d love to see a comparison of plain bread made with different cheap flours. Though, that would be a bit different from the multi- ingredient steep/cheap format.

Uh you did the drizzle wrong you need to melt the sugar with lemon juice in a pan not leave it like a grainy milk

Goat butter doesn’t have that great buttery taste. It’s expansive for other reasons. Should have gotten:cow grass fed organic butter

Have a look at sortedfoods most recent video, they did a focaccia with cheap and expensive flour and they said it made a lot of difference

Goat milk and goat butter are amazing. Sheep yogurt is pretty good too! They are great alternatives for people who have cow milk sensitivities.

You should try bergamot lemons. They are pretty pricey but OMG they taste so good.
Depending on the recipe, good flour can make quite a difference. The airiness that you noticed in the steep cake was because of the better flour.
One of my fav cakes......going to have to test this out myself (its an excuse to eat lemon drizzle cake but who cares) 👍
The lemon juice belongs in the dough, which makes it taste better and make it fluffier. I also make a lemon juice powdered cake mix that I put on top.
