I don't ever activate the yeast; I think that's needed, only when you've yeast that's too old. I just mix the yeast with all other ingredients, and knead. Roll it thin and don't wait for the shaped dough to puff ....immedietely after shaping ,top it with your favorite toppings and take it into preheated oven.Then you will get thin crusted pizza.

Hi Fatema,Just take the dough out of fridge and let it come to room temperature.Then divide and roll into balls and let the balls sit for 5-10 minutes and then shape into pizza disc and then add topping.And then baking.No second proofing required.But if you want to have thick breaded pizza, you can let it proof and puff up (for about 15 minutes, if your place is warm) and then add at the toppings and then continue with baking.The second proofing is according to how thick or thin we want our pizza to be.Real Italian pizza is made without second proofing.Hope this helps.

Why is proofing required twice. One of the dough and once after shaping? Can we roll this with a pizza roller also
Hi Anubha,We can make pizza with only one proofing as well.This recipe uses double proofing method.
Yes you can use a pizza roller to roll them
At the dough recipe above use 1/2 tsp of active yeast. If i use instant yeast, is the measurement the same?

Yes it's the same; as we are using very small amount.Actual conversion is 1 tsp instant yeast =1 and 1/4 tsp active dry yeast.
