Dont put bread in the fridge. It can cause crystalization that causes it to go stale. I forget exactly what it is that crystalizes in the bread but i know that you can warm the bread to reverse it at least somewhat.
To extend this. It is fine to put the bread in the refrigerator not the freezer. Putting it in the freezer will cause it to be hard as a rock if you kept it there for too long.

Lived in a place with real high humidity, bread would blue mold in a day or 2 if left out of the fridge.
