This guy is excellent at explaining details, seems like a really good instructor.

Wow. Never seen this level of detail in an Omoplata before. This is brilliant.

While I am in the Williams guard, people jump over me. Just like the omoplata escape.
    Am I doing something wrong?

I've barely seen omoplata in MMA, seen a lot more in dojo spar with not too high rates of success in finishing it. I've used myself mostly for reversal or in transition to another move. This instructional tells us where to focus and put pressure on so the guy won't be able to escape or abort, making me want to go back to mat to try with new details in mind. I personally have thought omoplata gives too much freedom for your opponent in terms of head-to-spine area's mobility that plays a role in nullifying submissions whereas regular kimura using your both arms can control your opponent's entire upper body with easier steps of adjustment.

Omoplata is more of a sweeping tool than a finishing tool, in mma and nogi. You have to have super good control with your legs and arm over your opponents arm and body to maintain the position to get the right angle to finish the submission, so it tends to lead to sweeps if even that without the gi, but with gi its different stroy, you get so much friction and good grips from the jacket, pants and belt that it makes the control part way easier, watch clarck gracie and his omoplatas with the gi.
