i tried a similar recipe earlier for breakfast but i added in 3 tbsp of sparkling water. the addition of the sparkling water made the batter thick yet still runny and gave me fluffy and airy pancakes.
our family doesn’t need to be gluten free, but I found a good deal on Almond flour and tried several recipes. We love this one the most! I eat it without syrup.
Oh WOW! this is fantastic. Pancakes have been one of my favorite breakfasts for all my life but as I approach old age and pre-diabetes, I have had to cut out grain based carbs and sugars. This recipe makes pancakes that taste just like the wheat flour ones I used to eat. Just marvelous and thank you so much. What I realized I need to do now is cut my consumption in half since I forgot that I found with almond flour bread, half the size goes even further than a regular sized slice of Ezekiel bread which was my other option. The same I found holds true with this recipe. Two of your size pancakes fill me up. And I also have to remind myself that what I am eating is high protein, not carb. The only change I made was to whip the egg whites into a froth to add some air bubbles to the mix for a lighter pancake. I found that helped my almond flour bread from becoming a door stop. Otherwise, I found this recipe worked right out of the gate, or pan, or bowl, or something. I also found that like most recipes made with almond flour instead of wheat flour, the products don't hold together like grain based recipes, so when flipping the pancakes, I lifted the skillet, tilted it as I slid the spatula under the half cooke pancake which helped it slide under and did not break the pancake. Now I just have to find a Xylitol sweetened fake maple syrup. I don't like the ones that come as a gelatinous mix. I find if I add a soupçon of real maple syrup, it makes it taste more real without adding much sugar. So thanks again. I am in your debt.😋

Ok, I just tried this recipe and it was good but I did use almond extract because I didn't have vanilla. Some pancakes were a bit crumbly eventhough I followed the directions exactly🤔 🤷♀️ What I like is there's no bitter taste like some gf flours but I did get 7 4 inch pancakes which I will freeze for another day🙂 Definitely will be making these again. I tried this just now and they came out really grainy and didn’t taste like anything. I followed the instructions exactly, but they still didn’t taste good. I made them specifically for my grandmother to try and change her diet to a healthier one, but she also said there’s no flavor and they’re grainy.

Do you have to put olive oil in or can you leave it out?
The olive oil helps with the texture significantly, but feel free to experiment with another liquid if you'd like to.
