Currently making a mojito wine. Mint, lime zest, ripe key lime juice, and natural cane sugar.

Hi sorry me again, still loving the teaches. Can I ask when fermentation is complete, do you need to add wine finings to clear the wine, and then do you filter before bottling? Many thanks

Hi, I dont sue finings to clear the wine, I just leave in the demijohn a little longer until the sediment drops to the bottom.

If I remember rightly, this one was touching 12% and one bottle over the course of the evening was enough

Cinnamon can inhibit the growth of yeast and stop or slow your fermentation. Add the cinnamon flavoring after your ferment.
