- Sam Ciccarelli and Rosie Dooley live in a kaleidoscopic attic home that is a maze of triangles, tunneled bedrooms and expansive skylights that have inspired them to launch a one-of-a-kind pizza venture. The couple, who met while working at the famed Chez Panisse, sell wild-fermented pizzas cooked in a 2,000-pound, igloo-shaped oven bolted to the flatbed of a vintage 1989 Ford 250 truck.
At every pop-up since they launched a year ago, lines snake around the block and pies sell out fast. Ciccarelli is dedicated to creating an ideal sourdough; he believes in the power of naturally-fermented doughs not just for for better digestion and gut health, but he mentions longevity studies showing that blue zone inhabitants tend to eat sourdough over breads leavened with industrial yeasts.
He is dedicated to his sourdough starter: he feeds several on a regular basis and stores one as backup in the freezer. His was originally brought from Italy, but he later realized natural leavens pick up the friendly lactobacillus bacteria from their current location, which isn’t a problem given the Bay Area’s renown for its sourdoughs.
On the day of a pop-up, he starts mixing the dough at 4 a.m for 70 pounds of dough - enough for 130 pizzas - and has to adjust the mix based on the weather. Changes in temperature can ruin a fermented dough so Ciccarelli is continually experimenting with ancient-grain flours and the dough’s hydration to create exemplary crusts.
Ciccarelli named the pop-up (and hopefully the future restaurant) Urelio’s after his great-grandfather, and he was inspired by the big Italian meals he grew up with.

I know the man who raised the kids that transformed that attic. Exceptional man, and exceptional kids too. He still lives there today. They are a fantastic family and part of the strength of what makes the East Bay so great. And yes, that pizza is fantastic. It has the chew. If you know what I mean.

I love the simplicity of this couple living in a small place and having a pizza truck and I also love the complexity of their lifestyle and business model. This feels like wholesome, honest, hardworking way humans used to live both in this country and in our individual ethnic original countries. I think more and more of us are interested in if not being able to fully submerge ourselves into this lifestyle, at least supporting those who are doing it.

This is a perfectly designed house, it is very beautiful and livable. I like the way the house is used and the sunlight that falls on it creates beautiful light and views. It looks modern and warm.
when i was homeless, i always biked by Chez Panisse and never went down that long driveway/private business property. (i used to sleep in Live Oak Park.) nice to see what it looks like back there and that they've turned it into a busy pizza scene! yippie!

I do love living on Vancouver Island but I miss the Bay Area, and it’s legendary sour dough!! Miss the Eggs & Butter parade in Petaluma (where the dairy truck was from)…. Love seeing the SF Giants hats on those boys! And at the beginning, I could hear the old jingle ‘Farms in Berkeley……? MMOOOOOO!!!’ Yes I left my heart in San Francisco…

The Bay Area’s weather is pleasant and constant all year round, HVAC is a lesser concern the closer you are to the water. The Berkeley area barely needs serious heating or cooling. It seems crazy but I’m talking from experience.

@@MaximumEfficiency It was sunny when we were there and the place was very pleasant. Insulation works. And the Bay Area has a great deal of foggy or semi-foggy mornings, which clear after 10-11 AM or so. Again, if you're by the water in CA, there's no such thing as "very hot" places, especially when properly insulated.

How can they run a food business out of the place where they live?
Generally speaking, it's called a home-based food business. Rules of the FDA, state, and local if applicable must be followed. I (very) briefly worked in the restaurant business and the local inspectors can show up at any time and the manager in charge has to stop whatever s/he's doing and follow them around and say yes ma'am/sir a lot. I'm sure that the same process applies to a home facility.
