So would these Brothers have encountered any Vikings? I understand that they were formed during the first decade of the 1200s and the major Viking Age had ended in roughly 1066. But Vikings were eventually allowed to settle in regions to act as a buffer between Europe and other Vikings. So would it have been possible for these knights to have encountered and dealt with the Pagans in the form of Vikings as well?
actually yes they did fought vikings,not Scandinavian ones though but the Curronians, one of the sea shore baltic tribes that were renowned for raiding. if you get a copy of Livonian Chronicles by Henry of Latvia, he mentions how Curronians fought and beat Livonians couple of times.
