    You've probably had Basque cheesecake before, but today we're making a low-fat version. It tastes very similar to the cream version but with much fewer calories. You should definitely give it a try!
    \ Food Fun Fact /
    ・Did you know that Basque cheesecake is meant to be paired with wine? It's said that Basque cheesecake originated in the gourmet city of San Sebastian, Spain. It's not an afternoon tea dessert but a dessert created in local tapas bars to pair with wine. The inside is very soft and half-cooked. They provide a spoon instead of a fork, so you can scoop it. This is a bit different from how we refrigerate and eat it in Taiwan.
    \ Ingredients /
    6-inch cake pan
    ・Cream cheese 120g
    ・Sugar 25g
    ・Unsweetened yogurt 120g
    ・Cornstarch 20g
    ・Eggs 2
    ・Lemon juice a little
    \ Instructions /
    Soften the cream cheese at room temperature, then add sugar and mix well.
    Beat the eggs, then gradually add them to the cream cheese mixture, mixing well each time.
    Add yogurt and lemon juice, then finally sift in the cornstarch and mix thoroughly.
    Pour the batter into a cake pan lined with parchment paper and gently tap to release air bubbles.
    Bake in an air fryer at 180°C for 20 minutes.
    \ Tips /
    ・Be sure to add the eggs in small portions and mix well each time to ensure smooth blending.
    ・Use unsweetened and thick yogurt.
    ・Lemon juice helps to remove any eggy smell; you can also use vanilla extract as an alternative.
    ・Make sure to press down the parchment paper; otherwise, it might be blown over the cake by the hot air, preventing a nice caramel color from forming.
