If you could roll the sail around the mast to have more or less sail would make it safer i think so you can lower the force in aggressive winds. You need a sponsor or budget. I think you could produce some really good videos with limited funds put into kayak sail setup with some purchased hardware. enjoyed watching, hope to see more. Also it would be good to see you wear a pfd in case of any accidents.
I do not remember the exact name but was something like timone sabia - it was a rudder ‘ fai da te’ by laser boat sailors in north sardinia La Maddalena. The rudder would pivot up or kick up when it hit the sand, so it was easy to just run the boat up onto a pink beach with no damage to rudder.
It's not hard to build a swiveling rudder. All underwater fins should be NACA hydrodynamic shaped tho, as close as can be made with available tools. That's not difficult either, time consuming is all.
The idea if good, but there are some considerations. First, u need to get rid of the wooden parts. Second, the boom position must allow to be in a more confortable position, hint, Cut the sail in an angle to allow the boom to be kept in a higher position in the clue, and third: u need a retractile daggerboard. Forgot,, forth (and most important): never go to far without a paddle.
Good point about the paddle. PFD too. Dagger boards are a lousy design because will break something if hits something as a rock. 1 swivel-up bilge board far better in a kayak application.

Aluminium and salt water dont mix together ,unless its marine grade special aluminium.Othervise it will "rust"and be eaten away by salt.Even near salt water regular aluminium has shorter life than away from sea water.There are some other mistakes when it comes to rudder -its too long and its not wide enough ,you want a shorter but wider one ,that is thin .Door hinge is ok system to mount it just use stainless steel.We in Croatia next to you traditionaly build steering on boats from wood with 2 hinges. You wanna consider to install keel-the longitudinal structure along the centerline at the bottom of a vessel's hull, on which the rest of the hull is built, in some vessels extended downward as a blade or ridge to increase stability. Most of sailboats have it.
Add 2 sealed pvc pipe on each side of the boat, like a trimaran or even better (smaller), make the tube assembly slide laterally. Or one sealed pvc pipe you can rotate from one side to the other, below the kayak, perhaps even using the mast/sail to do the rotating,
