I don’t think this ever got answered for you. Peanut butter cookies are made with just peanut butter, sugar, and eggs, so they don’t have the capability to spread out like normal cookies. So when you put the cookies on the pan, you have to smush them with the fork to make them the correct shape, otherwise the cookies will just stay as lumps.

The reason why people “put cross marks” as you say on the peanut butter cookies as you say. Its more like they are trying to spread out the cookies. People just tend to use forks which leaves the cross hatch marks (literally what they are called). See most cookies will flatten as they bake, but for some reason peanut butter cookies just done, so to help that, people flatten them before hand using forks which leaves those “cross marks”.
