I think it'd be pretty no matter how many spirals there were. Unfortunately the art world has a bad habit of looking for explicit patterns and using that to justify beauty. Like claiming that the most beautiful things all follow the golden ratio, then using a bunch of examples that to be honest, just don't. Beauty is much more flexible and context-dependent. But hey, that in and of itself is beautiful!

Yeh the reasons they grow like this is so that seed/peta/whatever can catch the most light or water.
Vihart (math youtuber) has a great series of videos about this and the science behind why it happens. It's always hyped up to be some "sacred geometry" thing but i think the coolest part is that we can describe exactly what's going on without relying on any kind religion. Definitely check out the series if you haven't

As a Christian and scientist, I've always liked the thought that science and math and things like the Fibbonacci sequence were God's way of leaving evidence behind that can't be disputed. We know The Exodus happened pretty much down to the T as the Bible says it happened. And we know why.

its an efficient way of organizing things, and evolution tends to produce efficient processes. like bees using hexagons for their honeycomb
the flowers that couldn't organise themselves like this, and produce this much seeds, got outcompeted in the game of nature. stuff like this seems to naturally manifest giving long enough time.
It has to do with how hormones are distributed through plant tissue. Every new growth (or floret, in this case) uses up the relevant hormone, and then the next growth will inevitably follow where hormone concentrations are high enough. If the different growth points are packed closest together, the hormone levels at each point will be affected more and more by the various growth points below it, and eventually that just inevitably turns into a regular ordered spiral, even without order being programmed into the processes that lead there.
