Interesting how you removed the word PERSIAN from the text that you copied from wiki pedia
      Here is the origin:
In Ibn Sayyar al-Warraq's 10th-century Baghdadi cookbook Kitab al-Tabikh (Arabic: كتاب الطبيخ), a compendium of much of the legacy of Mesopotamian, Persian, and Arab cuisine, there are descriptions of kabāb as cut-up meat, either fried in a pan or grilled over a fire.[5]" source: wiki pedia
      Now, read this:
Kebabs were first mentioned in texts from the 9th century AD, and they were likely invented even earlier. The dish is thought to have originated in the Persian Empire, where it was popular street food. The word "kebab" is thought to derive from the Persian word "kabab", which means "to fry" or "to roast".

      Now read this
Kebabs were first mentioned in texts from the 9th century AD, and they were likely invented even earlier. The dish is thought to have originated in the Persian Empire, where it was popular street food. The word "kebab" is thought to derive from the Persian word "kabab", which means "to fry" or "to roast".
