Also I had a Persian ex girlfriend for 3 years and her and her family never made chicken koobideh. I think it’s probably come about in Persian restaurants in west to suit local tastes.
A small braizer can do the job. u can prepare everything in the house and then go for a picnic and grill kebab in nature. Or we would use the rooftop in the night I remember playing backgammon with my father and checking the skewers at the same time so it wouldn't burn :)

When I was in college, there was a Persian kebab place right in front of my school’s gate and because it was often one of the cheapest and tastiest options around, I was there probably 2-3 times a week for years. Haven’t thought about that place in a long time but because of this video I have, and am now 100% going to try to make this at home.

2 lb ground lean ground beef 80/20
Saffron butter:
1/2 stick Butter (melted)
1/4 cup Saffron water
1/4 of a Lemon juice
Pinch of Salt
Sauce:
1 cup Mayo
1/4 of a lemon
1 Garlic clove (grated)
1/2 tsp Sumac
1/4 tsp salt
Rice:
2 cups Basmati rice
Water (salted)
1 boullion cube
2 tbsp olive oil
2-3 Cardamom pods
1/2 stick Butter (add after rice is par-boiled)
Saffron water (add after rice is fully cooked)
Vegetables & garnish:
Shishito pepper
Yellow onion
Tomato
Sumac

As a Turk, here is the biggest tip I can give. Use the fat from the tail and mix different meat types that can be beef or from a lamb.
That's why Adana smells like ass

When I was in college, there was a Persian kebab place right in front of my school’s gate and because it was often one of the cheapest and tastiest options around, I was there probably 2-3 times a week for years. Haven’t thought about that place in a long time but because of this video I have, and am now 100% going to try to make this at home.
