There are certainly many excellent books and notes on linear programming. My lectures/videos are based on the book "Understanding and using linear programming" by Jiří Matoušek and Bernd Gärtner (2007). It is a great book, because it strikes a good balance between the underlying maths and how LPs are actually used.
