    This is a really useful video for me. I use the cold water to boiling and then cover and remove from heat but I'd been told to let them sit for 20 minutes rather than 12. I much better like the idea of waiting 12 minutes. That may be why I have so much trouble peeling them. Because they are overcooked maybe? I've got some eggs in the frig now. I think I'll boil them up tomorrow. Thanks!

      The amount of time you let the eggs sit depends on the size of the eggs (check the carton). Let eggs stand for: 12 minutes for large eggs, 9 minutes for medium eggs, and 15 minutes for extra-large eggs.
      The older the eggs are, the easier they will be to peel. If your eggs are very fresh wait at least a week to cook them. Also cooling them quickly in very cold water helps. Let me know how your hard boiled eggs turn out using this recipe!
