For years I cooked my brisket with sauce for the last 30 to 40 minutes. Basically cooking it on until completely dry. The last few years I got away from doing that. Maybe because it seems to be the norm of the BBQ world to not sauce. I must say I have always liked the cooked on sauce and I wouldnt serve a rib unless I did that. Yes Im born and raised in Texas
