My local Kebab shop does cater to two types of customers. They serve the ‘regular’ customers until about 9pm with the high spec grilled meats, great salads, etc. and then after 9pm until about 2 in the morning, they have the drunk spec, just to soak up the alcohol and extra hot chilli sauce so you can feel brave after a night out.
I've always thought 'kebab' has maybe the greatest spectrum of quality of any food-type. On one side you've got stunning grilled meats and the chance to eat it with pinches of fresh breads and a full mezze selection across the table - and then on the other the warm comforting brick that you can clutch to your drunken chest. And both have their place in my heart. We're finally getting places that straddle the divide - somewhere you can nip in at lunchtime and get 5 mins later have something handed back to you over the counter.
@@h.u.2462 i am from erzurum and cag kebab is way better . This is not döner .It looks tasty however it is something new. The idea with döner is having many layers to get a tender kebap. And the statement that döner is made with cheap meat isn’t true. For real döner they use high quality parts. Using ribeye mixed with lamb is not unusual. And thanks for mentioning cag kebab.
It’s a very good idea, my wife is Turkish we go to Turkey at least once a year every year and I can quite honestly say that you get kebabs very like that in Turkey, the use a small skewer and cut a thin bit of meat off under the skewer. I love this!
This is why I love PitmasterX. Its not just a simple instruction of how to make some basic doner kebab anyone can pull that off. He creates the most epic. best, doner kebab I could imagine and creates it. Making me wish I was there to taste it. Even the mayonnaise recipe alone is worth saving for every burger/sandwich I make in the future.

I have never seen anyone cut a roast like that in preperation for placing on a rotisserie for the purpose of being able to add tons of spices and so you can cut directly off of the spit as restaurants do on their vertical spits. Three Genius ideas man. Thank you for sharing. Now I have to go and buy a rotisserie.
We made this kebap last Saturday from a BGE's rotisserie with Argentine ribeye. Everyone was really totally blown away. Grandiose mixture of spices. The meat was incredibly tender and juicy. Mega.
As an Bulgarian, we do quite a lot of rotisserie(we call it cheverme) this way for whole lamb or pig, and the idea is not minimize the drop s as much as possible which means they will stay on the meat and keep it moist, if you allow them too much to drop, you will lose tasty fat and you may have your fire out of control :) so It's all about the rotation speed :)

Meat aside, they have this sweet garlic sauce that it quite typical but delicious made from sweetened condensed milk, vinegar and garlic powder (or fresh pressed garlic). The original version was made from evaporated milk with sugar, vinegar, garlic (powder or fresh). For some reason having seen pretty much all your videos over the years, I think that you would love this sauce...

I have like a bag of frozen kebab (really cheap and kinda bland😅) i always make my own spice mix in my mortar with; cumin seeds, paprika powder, kurkuma and some garlic powder! I definitly would love to own a good bbq to make my own stuff! Oh and i make my own garlic sauce with mayo, sour cream, lemon juice, shitload of parsely and freshly grated garlic

The cheaper the meat, the more spices you can hide the low quality behind - in this case i would use only salt, pepper, maybe onion pouder and a simple yoghurt only souce would work the best for me. I am from Turkey and this has nothink to do with Döner. It may taste good and all but comparing with döner is not a good choice. For döner kebap lamb meat or Beef's behind the round meat are used. Also Doner kebab is marinated with onion juice, black paper and milk. This looks more like Fajita i belive:)). Also, Döner kebab doesn't need sauce. Döner with sauce doesn't make any sense at all. Because the main thing in doner is only the flavor of the meat. The only time you'll use sauce is if you don't trust the taste-flavor of the meat.

This looks more like Cag Kebap. Very worthy try though, I also use ribeye to make a kebap-like this at home :) The real Doner Kebap in Bursa Turkey and it is made from different parts of lamp. The best doner you can eat in the world is at Uludag Kebapcisi in Bursa - from the apprentice of the founder of Iskender Kebap (a.k.a. Doner Kebap). You can be my guest anytime to give it a try :)

It would be a much better fat distribution if you would make smaller triangles after you sliced the beef and layered the triangle shapes on to the scewer. Well in my opinion this may be a nice juice meat but not the best doener you can probably make. I don't think that you tasted a real good doener which is prepared and rested in a special fruit and juice mixture 1 day prior of layering on the scewer. You can eat a good doener in very few places in Istanbul if you like. Try "Tatar Salim" in kadiköy for example, if you visit İstanbul. Many restaurants are just focused on earning money and the taste isn't important at many places. That's why you may not tasted a good doener dude. About me : I am speaking from experience. I am not a youtuber but I travel around the world and dine at many stake houses. I know Argentinian, American, Chinese, Japanese, Indian and Italian cuisine and I do meat grilling and smoking my self aswell.

You should try yaprak doner its totally different to the doner kebab you are used to in holland.

It is a good maybe great grilled meat but not really doner. As you said it is not REAL doner. It is grilled meat in doner style.
