  • Long Melford, Suffolk.
    Exterior. Panning shot from the village green to a large pile of fire wood. Iris Adams enters and picks a bundle from the pile. C/U of Iris's hands picking up the bundle.
    Interior. M/S of Iris pushing the bundle of wood into a faggot oven built into the wall. C/U of the wood being pushed into the oven. Top shot of Iris dividing a large lump of dough into smaller sections. Iris places the smaller sections onto a tray, her daughter Elizabeth then kneads them. M/S of Elizabeth taking the sections to a tray of tins for baking. C/U of the dough in tins. M/S of Iris lighting the oven, as Elizabeth fills the tins with dough. C/U of Iris poking the fiercely burning wood inside the oven - "as the temperature of the oven rises; the bricks darken and eventually go white. The exact temperature required is judged by the colour of the bricks. No thermometer is used". C/U of the flames.
    C/U of the oven; the flames have died down and Iris rakes out the embers. M/S of Iris tipping excess ash into a nearby grate. Various shots of Iris and her daughter sliding the loaves into the oven using a palate on a long stick. C/U of a row of unbaked loaves ready to go into the oven. C/U of Iris mopping her sweaty brow. C/U of the loaves in the oven, Iris' hand is seen shutting the heavy iron door. M/S of Elizabeth shovelling ash in front of the oven door to prevent the heat from escaping - "Ye Olde Bakery, as it is called, is the only one of its kind left in the country. There is no shop. Local people call at the bakery for their bread straight from the oven". C/U of the freshly baked loaves been taken out of the oven. M/S of the mother and daughter as they take the baked bread out of the oven. Various shots of the rows of baked bread, Elizabeth adds more loaves.

    Iris Adams was my grandmothers sister...I remember her but she had left the bakery by the time I was born.

    Same here, love the taste and smell of freshly baked bread. There was also a bakery we went to on Sunday mornings, fresh from the oven. I always got told off for eating the middle bit whilst it was still hot before we got home. Delicious.

    I know we all need the big factory's. The world couldn't survive on just the little people making
    every food and products we all use today.
    But its a shame so many have just died out.
    Some traditions & old ways, are going to be lost for eternity...

    An artisan skill! We would be willing to pay extra for bread like this. It's nice to see the return of a few artisan bakeries that make their products from scratch, but none near me - nor do any of them use a wood fired oven. Feb. 2023
