2 Pork Butts Smoked on a Weber Genesis II. In multiple thunderstorms.

  • 2 8-pound Pork Butts, Boston Butts, Cut Pork Shoulders for Pulled Pork. Smoked on a Genesis II E-310 Propane Gas Grill. With soaked Hickory Wood Chunks. iGrill 3 is also used and shown working in heavy rain storms/thunderstorms.
    D Grill's Recipe for Smoked Pork Butt, Boston Butt, Cut Pork Shoulder, Pulled Pork:
    For 2 8-Pound Pork Butts/Shoulders:
    Ingredients:
    2 8 Pound Pork Butt Shoulders
    Yellow Mustard
    Pork Rub or Pork Butt Rub of choice
    1 cup of Apple Cider Vinegar
    2 1/2 cups of Apple Juice
    Hickory Wood Chunks, soaked at least 30 minutes.
    Instructions:
    Rinse off the meat with some water.
    No trimming necessary
    Cover fat cap with yellow mustard and pork/butt rub. Then lay the fat cap side down.
    Inject with:
    1 cup of apple cider vinegar
    1 cup apple juice
    (1 cup of the total mixture into each.)
    Cover the rest in yellow mustard
    Rub with pork/butt Rub.
    After injection and rub are applied. Let rest 30 minutes, while getting grill warmed up and smoky with Hickory Smoke.
    Place in grill fat side down.
    Cook at 275 Degrees F.
    Add wood chunks for smoke about every 2 hours.
    Cook to 165 degrees F. internal meat temp, should be well cooked externally.
    Wrap with foil and add 1/2 cup apple juice to each, 1 cup total.
    You can cook at 295 Degrees F. at this point and cook till about 200 degrees F. internal meat temp.
    (If only cooking 1, then continue to cook at 275 Degrees F.)
    Add 1/4 cup apple juice to each, 1/2 cup total. And place wrapped in a cooler for 60 minutes.
    Break the pork up with forks or other tools and enjoy!
    Note: This could be Pork Roast instead of pulled pork, if you cook in a roasting pan and baste every couple hours with drippings.

    Nice job! The pork butts looked nice and juicy! I learned two things from this video. 1) You can smoke pork butts on a gas grill. 2) You have a lot of patience! Between the pouring rain and the dark of night, 12 hours later, I would have cracked open a bottle of Jack and taken a sledge hammer to my grill! 😵

    I don't know why weber grill and other grills don't add a dedicated built in smoker box that you could remove without have to open the cover to add chips. MY Alfresco barbeque has a drawer chip box that slides out with a dedicated 5000 BTU burner that is great and can add chips as your cooking. But my Alfresco barbeque cost a lot more than most grills and it is built in.But watching this video you did a excellent job in cooking made my mouth water I wish I was there. Thank you Mr. D Grill!

      Weber has made many various types of grills over the years. Some of their gas grills were designed for better smoker box support than others. The Genesis II wasn't one.

    Mr. DGrill, I found your videos after purchasing the same Weber Genesis II E-310 grill. I am now ready to break it in, and I am using your video for my single pork butt. I connected the Igrill3 probes. They are pretty nice. I am into my first batch of hickory chunks which flamed up after a 2 hour soak in water, so I sprayed the flames down with water. I have my next batch of wood chunks soaking now. I am hoping for the same results you had. I also bought the ambient monitor and it is running at 275 right now. I will let you know how it turns out. Outstanding videos, man. I have watched nearly all of them.

    Smoked my first pork butt today. 8lb roast. I followed your instructions but I used olive oil and a chile lime rub instead. 7 hours on the grill/smoker and 1 hour in the cooler. Turned out fantastic! Appreciate your videos! I'm moving up to a brisket next weekend and shooting for smoked turkey this Thanksgiving. Cheers!

    Great video. Especially liked seeing a slow cooked roast like that. I've never tried such.
    On another note, I have been hesitant to buy the iGrill3. But after hearing how well yours stood up to that long cook and all the rain, I went and got mine this afternoon. The store was out of stock on the ambient probe, but ordered it and will have it Monday for me. I did 2 chicken breasts tonight. Put one probe in each horizontally, on indirect heat. Grill ambient temp was about 375. Without flipping the chicken, I waited until the app said they were both 170 before removing and serving. BEST GRILL ACCESSORY EVER! Thanks for your videos.
    P.S. For those wondering, I have the G-II SE-410. I put burners 1 & 4 on Medium. 2 & 3 set to off, after initial warm-up. Chicken was centered in the middle.

    I enjoy watching your videos, helpful and informative. I have the same grill and smoker box combination, however my cooking grill is not the stainless bars you have, mine is the standard version.
    I have a question regarding the smoker box, how do you get started with it, do you have the heat set to high to get it smoking? How do you prevent it from flaring up and causing heat excursions when placed directly on the burner like you do? I have had flare ups even when placed on the grilling surface and the burner at the lowest setting? Are bigger chunks the key over smaller chips?

      +Jeff Dayton The Texas Cheat is also commonly known as the Texas Crutch. It's a method to tenderize grilled meats. Which is demonstrated in the video. Basically wrapping in foil with some fluid, I use apple juice. But fluid is not always used. It's a matter of preference.
      Grilling takes a lot of moisture out of meat. The Texas Cheat/Crutch is a way to bring moisture back.

    D, I love all of your videos. I do have a kind of a dumb question on this one. When you put the completed pork in the cooler, is there ice in there or is it just an empty cooler? Thanks.

      It's empty and actually it's to keep them warm and sweating to make the meat even more tender. So you can even put some warm water in first, then pour the water out to pre-warm the cooler and then put them in. 👍🏿
      You can also put some towels on the bottom to catch drippings.

      All I can say is I do it and it's a very tasty moist result. If you want _ less_ flavor skip it, but I recommend you inject some flavor. It also helps to break down the meat and fat.

    I found your channel because I'm planning on picking up one of these grills Thursday. Question. Does the grill have even heat across the grates or is one side hotter than the other when all the burners are set the same. Thanks buddy

      Larry Larson Definitely even on both sides. You can see my videos cooking various burgers.
      Since I do use a smoker box, that does create heat, but overall things are still pretty even when all burners are lit.

      D Grill good video, I saw it already though.... I mean a 3 rib minimum ribeye roast, I would assume the cook would be somewhat different simply because of the size of the roast. Or am I assuming wrong?

    Try wrapping chunks with foil instead of using a smoke box. Poke a few holes in the foil and set them on the grate right above the burners you’re using. Chips are such a waste.

      No need to buy a smoker when you have this Weber E310 Grill. Does both well. I have a 6 pound rib eye roast smoking on mine right now. iProbes provide for accurate temp control in meat and ambient temp. Should take about 5-6 hours.
