Heston Blumenthal’s culinary quests led him to ‘The Forme of Cury’ - one of England’s oldest recipe books - and it is from this and other historical works that dishes such as ‘rice and flesh’ and ‘frumenty’ (c.1390) come - although the latter’s ‘grilled octopus with spelt, smoked sea broth and pickled dulse’ wouldn’t sound out of place in any 21C restaurant. Obsessed with consistency, the kitchen works with intelligence, efficiency and attention to detail to produce dishes that look deceptively simple but taste sublime.

Still probably one of my favourite restaurants I've ever been to. Meat Fruit and Tipsy cake in particular are just unbelievably perfect.

Been there once for a la carte and man that maindish blew me away. Also the chicken liver parfait is a delicious classic on their menu 😍

I wish you were right about the exchange rate in the title, but £468 is actually US $618, not $518.
Was the pink stuff Bird's Angel's Delight?
I spent literally thousands there in the first few years. Then the hotel fire, and covid, meant a long hiatus, but I have been back once since they reopened. Sorry, not going back again. Something I ate there really upset me. Not sure what. And the shine has come off in other ways too. The meat fruit is simply not what it was. It used to have a lightly dimpled texture created by a partial freezing of the orange gel. Now, as here, it is unrealistic, just glassy smooth; moreover the removal of the foie gras means the parfait is simply not as luscious as it was. Such a shame. But I will miss the tipsy cake. It is to die for, genuinely.

It all seems reasonable until I see £13.50 for a scoop of ice cream. Looks delicious though.
I always find it funny when people protest at the prices in a restaurant like this (one of the best in the world). It’s meant to be a place you’d go for a special occasion, probably only once in your life. Of course you can get delicious ice-cream elsewhere for much cheaper. But for a one-off to experience something truly special… that’s the tradeoff: take it or leave it!
