JUICY & DELICIOUS CHICKEN KABAB RECIPE (Step By Step Guide In English)

    Ingredients required for making chicken kabab - Makes 12 - 15 kababs
    * 850 gm/ 2 lb ground chicken. I always grind boneless skinless chicken thighs in my food processor. You need a fine grind. Please do not discard any fat if you are grinding at home. Fat helps in producing juicy kababs. You can also use mutton/lamb/beef. The cooking time will be more compared to chicken.
    * 1 teaspoon finely grated ginger
    * 1 tablespoon finely grated garlic (I used 6 large garlic cloves)
    * 1 fresh green chilli (optional)
    * 1 tablespoon fresh lemon juice
    * 1 small potato
    * 1 cup fried onions or slice 3 medium onions and fry them in little oil till golden brown. Please allow the onions to cool down completely before adding to the meat.
    How to make fried onions and store them - • HOW TO FRY ONIONS PERF...
    * 12 mint leaves (optional) / 1 teaspoon dry mint leaves
    * 3 to 4 sprigs of thyme/ 1 teaspoon carom seeds (ajwaiin)
    * 1/2 cup chopped coriander leaves (cilantro)/ parsley
    * 1 tablespoon ghee/melted butter/oil
    * 1 large egg
    * 4 tablespoons (standard measuring spoons) masa harina (yellow corn flour) also known as makkai ki atta in Hindi. You can also use whole wheat flour/roasted gram flour/plain flour/fresh bread crumbs (add 2 slices of bread to your blender and blitz)
    * 5 to 6 tablespoons oil for frying
    For the spice blend -
    * 1 tablespoon cumin seeds
    * 1 & 1/2 tablespoon coriander seeds
    * 1/4 th teaspoon black peppercorns
    * 1 teaspoon garam masala powder
    How to make garam masala powder - • 3 MUST HAVE HOMEMADE I...
    * 1 tablespoon chilli flakes (I crushed 4 dry red chillies)
    * 1 & 1/2 teaspoon salt or as per taste
    ** I prefer making a coarse grind of the whole spices but sometimes people may not like if a whole spice comes in the way while eating, in that case grind them further but never make too fine a powder.
    Serve these chicken kababs as a starter or as a side along side the main meal. You can serve it with a green chutney - • CREAMY GREEN DIPPING S...
    Though serving them immediately after frying tastes the best these kababs also taste good when they come to room temperature. You can fry them before hand and microwave or heat them up in a low oven before serving.

    I love kababs. This is a nice recipe. This is the very first time, I've seen thyme, used in an Asian recipe. You pronounced thyme correctly.

    Bumbi, I’m a new subscriber, so I’m still catching up on all of your wonderful videos. Every recipe is so detailed and explained so well, and they’ve all been delicious. Thank you for all the hard work you do for subscribers like me. I did learn a very helpful way to make fried shallots, scallions, and onions - in the microwave! I was skeptical, but it was easy enough to test out. It really works, plus you get delicious flavored oil you can use in other recipes. It was less messy and quite a bit faster than slowly browning in a saucepan.

      @@CurriesWithBumbi I learned this technique from America’s Test Kitchen’s RUclips channel. Put about 1/2 medium onion thinly sliced, along with enough neutral oil (I used grape seed oil because it’s what I had on hand) to cover the sliced onions by maybe 1/2 inch. Use a deep bowl just in case the oil heats up too quickly. Microwave on high for 5 minutes. Take the onions out and stir thoroughly. Be careful because the bowl can get very hot. Put them back in the microwave and cook on high for 2 minutes. Repeat a few times, until the onions begin to brown. At that point, switch to cooking/stirring every 30 seconds. It may take 2-4 more microwave cycles to get the deeply brown and soft fried onions we love so much. It’s a good idea to find that video from America’s Test Kitchen instead of relying on my very faulty memory, because I’m sure I left out some important steps or explanations. Save the onion oil as well, because will add lovely flavor to your savory dishes. I hope this helps.

    Looks delicious, easy to prepare and very convenient to have for emergencies. Just one question please... can I use chick pea flour instead of yellow corn flour

      You definitely can. Just roast the chick pea flour on low heat in a pan for a few minutes and then add it.

    Very nice, Bumbi! Will try this and eat warm in roti or pita bread with Romanian zacusca and green salad leaves. Minced chicken is available here everywhere, but it will be mixed, not only thighs. Will add some more ghee or butter.

    Can these be done in Airfryer or Oven? If yes could you please let know for how long 😊

      I haven’t tried in oven/ air fryer. But you can brush oil on them and bake at 350F for 15 - 20 mins or until the internal temp of kababs reach 175 F in an instant read thermometer
