- This dish is one of my favorite barbecue dishes. I love the honeycomb cuts, which allow the fat to be rendered better, resulting in crispy and tender meat. To successfully make this dish, both the cutting skill and grilling method are crucial.

Ingredients
600g Pork belly
Salt, pepper, wasabi(optional)
Instructions
1. Prepared one inch-thick cut of pork belly. Place the pork fat side towards you, and then diagonally score 2/3 of the thickness, creating half-inch thick internal cuts. Flip the meat over, keeping the pork fat towards you again, and score the meat in the same manner.
2. Roll the pork tightly from one side, then stand the meat upright.
3. Heat the pan over medium heat. Place the pork with the fatty part down on the pan.
Prepare a paper towel by folding it a few times, then use it to remove any excess oil from the pork.
4. When the pork is almost fully cooked, cut it into bite-sized pieces with scissors. Continue to cook the pork pieces until fully cooked.
