Why do they remove them from the eggs? I can understand cutting it but why not wait until they come out on their own.

How do you guys know they are actually the first in the world.
There are various ways. One way is by having a monopoly on a certain gene. If you're the first to import a "different looking" snake from the wild, you get to name that genetic variation, then you grow it to adulthood, and breed it, then there's no way for anyone to own anything like the babies you produced. This process takes years. Genetics is complex and very interesting. They also breed offspring back to parents sometimes in order to see what it produces. This process is how we have all of the variation in color and pattern with every captive bred reptile in the pet trade. Probability also effects how many times it takes to breed certain animals together to get an intended goal of genetic combinations.
