Awesome video. Best I have seen for identifying each cut in the rear hind section. You must have removed the hind quarters by removing them away from the pelvic bone with a knife, instead of sawing the 2 hind quarters down the middle with a bone saw like you did in your “How to skin and quarter a deer” video??? Or did you quarter it with bone saw, then worked the hind quarter away from the pelvic bone, prior to video? Thanks, for taking the time to make such a great video, and for sharing it.
