Ciambelle Sorana con Anice

Recipe:
562 gr. of flour 00
2 gr. of yeast
1 1/2 tsp. of anise seed
1 1/4 tsp. salt
240-250 ml. of warm water
Proceed by making a well in your bowl
add the yeast, anice seed to this add the water in the center
add your salt and finish with the water
the dough must take a very dry and hard elastic appearance
knead till you get this, till you get a smooth surface
place a clear wrap and then a clean towel and let
it rise for at least 1 hours, (make sure 1 hour only)
form your ciambelle, (follow as per above for the skirt )
this recipe will give you 3 small 6 inch or 2 larger ones
then have your water boiling so you drop the ciambelle in and take them out place on a cookie rack you will be baking these on it.
Place in a ventilated oven if you don't have one then use a baking pan filled with water on the bottom rack , this will help them get golden and for a small crust.

I have since i made this video i have used a mixer just up the water from 240 grams. Use a little more till the dough comes of the sides, this takes a few minutes and them just need for 3 to 4 min. Let it rise.

Hi! Ciao ! Si possono farle tante forme, da solo tondo come un donut, anche una forma contorta (twisted) , ho provato il mio meglio di farlo come quelle che fanno a Sora. Grazie per il commento
Sono le ciambelle che faceva mia nonna di subiaco.., le chiamano ammortoiate, (perché bollite è poi infornatele ho fatte oggi,grazie per mantenere le nostre tradizioni anche fuori Italia 👏👏

Ricetta in italiano grazie
Katia Chiapparelli 560 gr di farina 00, 2 gr. Di lievito, 2 cuccia grande di anice , 3 cucchiaini di sale , 250 ml di acqua tiepida
Metti la farina nel bowl fai la fontanella, aggiungi i semi di anice , metti il lievito (senza che lo metti nel Acqua) direttamente nella farina , poi quando l’impasti, aggiungi il sale ( deve essere un impasto duro )quando hai un impasto liscio , metti nel bowl copri con un panno metti nel forno solo con la luce , solo per UN ORA NON DI PIÙ , come vedi nel video questa fa quattro piccole oppure tre medie , formare in un piccolo filoncino e guarda il video come faccio le orecchie, procedi a metterle in una pentola con solo Aqua che bolle piano finché vengano su , questo ci mette un paio di minute , poi io lo metto su una rete che poi procede a metterle nel forno 220 sulla rete del forno finché prendano una doratura, ( io metto anche una ricoprente di acqua nel forno aiuta a dorare ) se guardi il video anche se è in inglese si capisce un po’ . Spero un giorno di fare un video in Italiano grazie mille ☺️

What the heck is 562 grams of flour? Everyone in Canada and the U.S. uses CUPS! You used cups for the water, so why not for the flour. Also much easier to start the dough with a mixer or processor. Adding a little olive oil or shortening helps the texture. Good reminder than salt and yeast do not go together. I usually mix the yeast with water first but this looks a little easier to mix it all together.
512bluemoon when I was in baking school we where thought dry in grams and liquid in a glass . But 562 grams is 4 1/2 cups give it a try thanks for watching
