Thukpa is really a comforting food, my mother often makes it at home and it is really really delicious, and for me the thukpa my mother makes is the best. Thukpa is not a food but an emotion for us nepali. My mom makes two types of thukpa 1.alu thukpa 2.chicken thukpa. Honesty i love the chicken thukpa more but the alu thukpa(or veg thukpa ) is also really really delicious and comforting the spiciness and the sourness makes it more tasty and feels like heaven.
I cut small chillies and put it in a small bowl of vinegar and leave it for a while, it tastes so good when you sprinkle a little in your bowl of noodles

Further add ginger, garlic and green chillies, cook them on high flame for a few minutes. Then add the sliced onions & stir & cook for a minute on medium high flame until the onions become translucent. Add tomatoes & cook on high flame for a minute. Add all the powdered spices and cook them on high flame for a minute. Add hot stock to the wok and bring it to a boil, once it starts to boil add all the vegetables, soy sauce, salt to taste. Stir well & cook for 2-3 minutes. Finish it by adding lemon juice, fresh coriander & fresh spring onion greens & stir once. Your thukpa soup is ready. Serve hot with cooked noodles and momo chutney.
In our Tibetan thukpa, we don’t put much masala, be it veg or non veg. The richness of the broth is the main thing. Than the thukpa itself. However looks good though!❤
The thing is it doesn't taste the same with the corporation water we get here... The water makes all the difference, hence we need to add masalas to make it taste better..
How about sauté the veg and other ingredients in the pan for 2-3 minutes and then add water and season it. Let it come to boil and add the raw noodles and boil for 5-10 minutes depending on noodles. Add sauces (optional) and eat.

Hello chef I'm not so good at cooking but if u stir fry the veggies with Garlic and Ginger it tastes more coz we Tibetan never put Indian herbs in thukpa we just add ginger Garlic dark soya sauce and
The moment i saw zeera powder and other maslas going in 😭 its not thukpa anymore with those masalas, and bay leaves 😆 , just prepare the models with egg yolk in it make it a dough and roll and cut stripes out, and boil them and wash them with cold water, and put lil bit of vegetable oil so that they dont stick together, and keep it a side, boil the chicken and takeout and use the stock for thukpa, stir fry the vegetables any type of veg of your favourite, add ajina moto ,green chillis garlic and ginger paste and salt pepper,add the cabbage in the end before u turn of the stove and add the stock and its done u can use cilantro or coriander too

Veg Thukpa
