    मारवाडी लहसुन की चटनी
    लाल मिर्च (सूखी) - ५० ग्राम
    लहसुन- १/२ कप (१२५ ग्राम​)
    खाद्य तेल - १/३ कप​ + ३ + ३ चम्मच ​
    अदरक (कटा हुआ) - २ इन्च​
    इमली - २ चम्मच​
    जीरा - १ चम्मच​
    नमक - १.५ चम्मच​
    -------
    Marwadi Lahsun ki Chutney
    Red Chilli (Dried) - 50 gm
    Garlic (pealed) - ½ cup (125 gm)
    Edible Oil - 1/3 cup + 3 + 3 tbsp
    Ginger (chopped) - 2 inch
    Tamarind - 2 table spoon
    Cumin seeds - 1 table spoon
    Salt - 1.5 table spoon

    Lot of people complaining about use of oil/ ghee. Uncle/ Aunty do not compromise on authenticity of the recipe. Please continue to make as it is made originally in Rajasthan. People who are complaining you have 2 choices:
    1. Don't use oil/ ghee OR use as per your desire, but, please don't complaint or put pressure to change the authenticity of recipe
    2. Visit sites / recipes that do not use oil/ ghee - boiled continental food is another option. Sorry, had to be blunt. You folks want original recipes and yet want to complain.

      @@shalinibharti5861 Perhaps... this site is not for you. You might want to consider Mediterranean recipe sites. Olive oil tastes "yuck" in Indian cooking. Please don't try to change the authenticity of the Marwari recipes.

      Most north Indians and Gujarati Marathis can understand marwari. Of course, we have many regional variants but we can understand each other quite easily. In fact most of us can make out where does the speaker come from?

    I can hear her all day!!! 😍😍😍😍 People speaking ill about using lot of oil i have only one question how else do you plan to preserve the food for 6 months if it's not oil. It's the natural preservatives. Besides it's an authentic dish. Clearly ment for people who grew up having these. You can't blame a British for having an English breakfast where everything is fried except the beans. This is Indian. Simple.

      मारवाड़ या राजस्थान मै कोई भी चटनी को स्टोर करने के लिए नहीं बनाता.... ये सिर्फ उन लोगो के लिए जो चटनी का व्यापार करना चाहते है.....राजस्थान की चटनी ना बनने में इतना वक़्त लेती है और ना ही दिखाया गया वीडियो मारवाड़ या राजस्थान के किसी भी जगह की रेसिपी को बताती है.....मुझे इस चैनल से बेहद प्यार है लेकिन ये रेसिपी थोड़ी अटपटी लगी......म्हारी मां लोगां ने सूखी मिर्च काई ने खिलावरी है🙄

    If you want to minimise the oil content, follow the recipe, dry powder the fried red chillies to a fine powder, keep aside.
    Then grind the fried garlic mixture separately with a very little oil....remove and mix in the powdered chillies.
    Alternately, you can reduce the quantity of tamarind and add a little vinegar to help with the grinding .....it will also act as a preservative .

    Those who are commenting about excess oil.. They must know that "MARWADI" recipes are all about good amount of Ghee and Oil..
    .
    And here the purpose of putting the desired amount of OIL.. is to increase the shelf-life of this dish.. 😉🙏
