I HAD all four corners but the management company for my landlord forced me to get rid of both the prepper part and the freezer. They use a generic lease that forbids having a freezer, washer dryer or dishwasher, because some of their properties (not ours) are electric included (government subsidized housing). And they called the prepper part "clutter". They threatened to evict us if we didn't get rid of them. Yeah we're looking for another place, but they're hard to find, and prohibitively expensive right now.
Another thing you can do with pasta to lower it's effects on your blood sugar is to cook it then refrigerate it. That turns in into lower glycemic resistant carbs. And the bonus is that it remains resistant even after reheating. So if you want to stretch a meal with pasta but you're diabetic, refrigerated and reheated pasta is the way to go.

#4 Oats : For the families who like instant oatmeal but need Gluten Free - the flavor variety is very limited plus all the added sugar. I have discovered I can pulse the GF rolled oats in the food processor, portion them out into baggies with dried or freeze dried fruit and nuts. Viola! Instant oatmeal that can be made just like the store bought stuff.
I grew up on so many Italian comfort food which, when i look back, were really extender meals. Peas and pasta, cauliflower and pasta in sauce, straccitella soup, frittatas, chick pea fritters(panelle )just to name a few. They were delicious and nutritious. Mary, you are so right. We have to look back at our ancestors and recreate what they did ❤
Yes, our ancestors knew nothing about the chemistry or the endocrinology of the nutritional process, yet their age-old choices of spices and their food combinations promoted optimal health! I like to have a bag of frozen, sliced mushrooms in the freezer. When you cook with them, you can’t really tell the difference between them & fresh. The canned ones have a more rubbery texture to me.
I agree, personally I absolutely don't like the flavor of canned mushrooms. I grew up on them because I came from a small town with limited fresh vegetables. My late husband introduced me to fresh mushrooms and he cooked them into a meal of deliciousness. Happy cooking and baking, Debbie Lavigne.
I just discovered frozen mushrooms last year! They worked in my Italian recepie exactly like fresh. I also dehydrate for longer term. Better than rubbery jarred!
I love red lentils, especially with chicken soup, it hides in the soup and breaks down very quickly. Red lentils also work well in spaghetti bolognaise, cottage pie and any red meat dish, casserole or stew. I also make a lot of Indian dishes, a lot of Indians are vegetarians and they have some absolutely lovely dishes that do not require lots of ingredients but they are very filling.
@@robertlavigne6560 in Australia they are available in most grocery stores. I even got a 3kg bag of them from Costco for $7 last week, so I assumed they are everywhere, we can also get them in Indian or Chinese specialty shops. They are like yellow split peas but they are red. They can also be used to make Dahl. If you google them you can probably find them in America
@@robertlavigne6560 I wouldn't say they're a "specialty" item. Lentils come in several colors and sizes. I've had green, red (kinda orangey in appearance) and black lentils. In my experience, the red ones can over cook quicker than the green...the red are smaller in size than the green. Theyre all delicious! 🤗
@@robertlavigne6560 Walmart carries large bags of red split lentils in the ethnic foods section. We use a lot of it in Indian dishes, as a protein in spaghetti sauces, and for making lentil loaf, as opposed to meat loaf. Lentils have a higher level of protein than beans. It's worth trying as a meat extender. The brown or green lentils make a good vegetarian "sausage". I make mine with oats, Liquid Smoke, and sweet Italian sausage spices.

I can only speak for my area of Germany but the meat prices are just horrific lately. I have two small children (3 and 8) and husband who often works outside all day year round. I can't feed them only pasta and rice everyday. All of your videos have helped me stream line my prepping. Thank you so much! Hard times are coming. Right Kids need good amount of quality protein, as well as fat and calcium! Adults need fat and calcium too along with moderate protein still. Can’t just live on grains, nope.

I am a nurse and maybe sadly picky about my kids nutrition 🤭 On April 30 here they announced a 25% increase on all dairy products beginning May 1. We get one liter cartons of UHT milk. I sent my husband direct from work to get 2 cases April 30! It is just getting awful. You could cry at the gas pump or in the supermarket. Please take care of you! However, my beautiful 19 year old bride (I married her 48 years ago) and I are awaiting our 15th grandchild. Suddenly, it has come to her attention that "food shortages" could lead to hungry children! She has nearly made our backyard a farm. She's purchased a Freeze Drier and, suddenly, my "hobby" of fermentation has caught her attention! Though she'll likely never be a commenter, she's now a viewer. Your calm, reasoned presentation has helped her realize, "I can do this!" Thank you!!
A healthy extender breakfast (or dinner) is half a bag coleslaw in a lightly oiled pan sautéed with soy sauce and a bit of chili paste. Add 4 scrambled eggs and mix, let cook, turning once, and you have a nice Chinese style omelette. You can put sriracha instead of chili paste. I'm teaching my grandsons healthy, cheap, filling meals for college.
I enjoy your channel do much and have learned a lot. I am 73 and the line you can't teach an old dog new tricks does not apply to your teaching and me learning. I have managed to get some kitchen scrap to root and put out leaves and i have a small garden. Can't wait to try some bone broth. May have to do it differently, but will let you know how it turns out. I have never tried beets and i did start some seeds. Thanks for all you show us how to do. I love the fact that you tell us what you are doing and encourage us to do more without ranting and raving about things going so bad. We all need to do what we can to preserve this place God made for us. RECYCLE AND REUSE AND SAVE OUR PLANET.

Lately, I have become so discouraged with the cost of everything. I really appreciate your hopeful approach that puts control back in my court. I have 3 teenagers and they eat/waste so much food. I hate buying meat, preparing it, and then throwing away half of it because nobody wants leftovers. It drives me crazy.
I would let them go without, seriously 😎 I so recall my kids standing in front of a full refrigerator complaining we have nothing to eat. I stopped buying their snacks! Nothing in our family pooped $$$.
@@kleineroteHex I have tried that route before. Unfortunately (and fortunately), my daughter gets free lunches as part of her tuition. She tends to fill up on carbs. She routinely asks my husband for Ramen or to stop at the gas station for grilled cheese. My middle son will just go hungry. He used to take leftovers every day to school, but after the Vid fiasco, they aren't allowed to use the community microwaves anymore. My oldest is at college and due to come home soon. He can't wait to eat meat because he can't afford it in his budget. I will share these wonderful tips with him.

I have used rolled oats in my meatloaf instead of breadcrumbs since the 1980s. I always have old fashion oats in the pantry because my husband often wants it for breakfast.

My very favorite cookbook is a 1933 Fanny Farmer cookbook that I bought at a used bookstore in 1985 for 25 cents. I Had just moved to Hawaii & had my 1st apartment. I was having fun & learning to be an adult. This book was written during the depression & nothing was wasted. I love it & learned to use everything without wasting. The cost of living here in Hawaii is quite high, so this book has served me well...

Potatoes keep very well if u have a cool place. Even just dig a hole in a dirt floor outbuilding, put potatoes in and put a trash can lid on. During cold mos, take them out of the ground if ur frost line goes down far.
We have always used potatoes or instant potatoes with water added after cooking your meat and added your seasoning for Tacos or burritos. Extender plus holds the seasoning making yummy taste. 1 cup to a pound of ground meat.
@@alinewright1093 I always add beans to tacos 1 or even 2 cans pintos usually (per lb of meat) but black is good too (2-4 cups cooked beans) And a can of petite diced tomatoes per lb of meat Onion, garlic and green pepper also- these are just for taste! Then add lettuce & black olives to the taco or burrito on top the cheese that’s on the meat. Lots of ways to extend Mexican food but gotta have that meat base IMO and dairy (cheese, sour cream) just MAKES many of the dishes. Fajitas with lots peppers and onions Carnitas with the loads of veggies in the tortillas or on rice List goes on n on Indian food is good for this too Only problem- produce is getting just as unaffordable as meat!!!!!
I'm 74 and have cooked for a large family for years. Have used most of your meal extender suggestions on a regular basis, but have never really eaten or cooked many lentils. Am fixing lasagna today with 1# hamburger and 1 c cooked brown lentils. I'm adding some parboiled curly kale along with the normal lasagna ingredients. Hope it is wonderful. I love these ideas. We are a meat and potatoes kind of family. But feeding 6 people is difficult these days and so I am trying to introduce vegetarian style meals. I would love to see how you make dehydrated potatoes.
We have seven growing boys who crave meat. I tried using lentils tonight along with finely shredded carrots and seasoned them just as I would meat with garlic, celery, onion, salt, pepper, and herbs.Then I added them to our ground beef. I was able to double the meat in our dinner and the kids didn't even bat an eye at it.
The meatballs could be extended even more with fresh chopped basil leaves and/or chopped fresh spinach leaves. :) The sauce can be extended by adding veggies to it.

I went shopping at Walmart this afternoon and paid over $3.30/lb for the fat ground beef - $33+ for 10lbs. Then I noticed that there was not one single whole chicken in the place, nor were there any chicken breasts either! For price comparison though, I picked up two 10lb bags of thigh/leg fryer pieces @ only $4.58. I was glad to find them too. Then I immediately went to the isle with beans etc. and got several 1lb square bags of lentils (which was all they had. . .how weird, a little square bag). I plan to stretch the hamburger meat with lentils and/or mushrooms as you mentioned in the video. I also called and told my sister about your channel and ideas so she may check you out too. I freeze everything in ice cube trays and once frozen divide it up into baggies! Great way to get the amt you need without having to thaw a whole chunk.
Mary, I just couldn't believe it when I saw you do the meat with the oats ground with the coffee grinder. I do the same thing, and have done it for years! This was a great video to show how one really doesn't need to eat pounds and pounds of expensive meat.
This information is so helpful!!! I recently made a cabbage/ground beef stew and added a cup of lentils and kidney beans. I then added leftover corn and a can of crushed tomatoes. It was so good!!! My husband and I had many meals from this stew!!!! I plan to make it again with left over rice and celery. I can vary it according to the beans and left overs we have on hand.you could make this with chicken or sausage.....so many options!!!
Loved the shopping tips sprinkled in this video! I feel like you could do a whole video (if you haven’t already) about how you shop. Like if there’s any planning/budgeting you do beforehand, how you determine what’s a good deal, etc.
Oh and yes I would like to learn about dehydrating potatoes. Well to get the flakes. While I was listening to this I realized I need to go buy a bunch of mushrooms to dehydrate for my pantry. So I can do potatoes and mushrooms.

I soak beans overnight with a cut up raw potato. About 1 potato per cpl pounds beans. Gets rid of all my problems digesting beans. Eating beans that were soaked without the potato caused me so many gut problems. Toss potato after soaking & before cooking.

I did the oat sausage and my carnivorous husband never knew. Add sausage spices such as sage, fennel, etc. so good. I also added a touch of syrup on top like I do my sausage.
(I added my RECIPE FOR OAT MILK at bottom of this comment) That package of organic sprouted oats u showed are wonderful. I use the same kind and yesterday I made homemade oatmilk from them. Omg it was yummy and sooo much better then the oatmilk from the store (the only thing is is that I found out ya can't mix it with brandy. Lol. It separates and makes it weird. Lol) but anyways make oatmilk from those and u will love it. To make about 3/4cups: - Mix and soak for 20min 1c - organic, gluten free sprouted oats 3.5-4c - cold filtered water - Blend (I used a ninja blender but any good quality blender should work, blend for about 20-30sec. I pulsed mine cuz u do not want the mix to get hot. Heat is the enemy and will make it slimy.) - Add a pinch or two of sea salt, 1-2Tbs honey, a pinch of 'Cylon' cinnamon, 1tsp vanilla extract, 1tsp plain gelatin powder - Pulse blend for a few sec - Strain 2x with nutmilk or brewing bag or a tea towel (don't squeeze, just let it do its own thing untill it all falls through) - Refrigerator (lasts 4-5days) (pref in a glass jar with a good tight lid) - Shake before u drink cuz it separates a bit.. yummy 😋 (This isn't really good for hit things. So for hot things just use the store bought type but for everything else this is delicious. Also the oats that r strained out make a real good oatmeal cookie. So don't throw away the stuff. Strain out.) 😀
Thank you for this. I never thought of mashing some beans to put with my meat. As a recent diabetic, this is a way I can bulk up my protein as I cook for about 6 people and then freeze the meals. This is really going to help a lot. As for Rice, I use a parboiled brown rice. Then I'm still getting the nutrition of the brown rice then it doesn't take so long to cook. I also made some buckwheat the other day and I like it better than rice

My husband worked three jobs! Our children helped in the family business! During the week I made sopa de arroz with cheese and salad for dinner. Sometimes with beans on the side tortillas and salsa. On the weekends we would splurge on ground beef, ground turkey, and chicken. We would invite company, and even enjoy pizza!
Dear Mary - several years ago I worked for a group of assisted living group homes - each one cooked their own meals and one of the things the residents and I liked was mock burgers they were make from Old Fashioned Rolled Oats, cottage cheese, and eggs and a small amount of minced onion or green peppers and fried in patties -- I would love it if you could find the recipe and publish it - It supplied protein in the oats, cottage cheese, and eggs, We served them on Hamb. buns with mustard, catsup, onions, pickles, etc and they always got eaten. The potato flakes are a great idea. But an even less expensive is to just take a potato and grade it finally on a cheese grater and put it in your stews. I also use my mashed potatoes to make my chicken gravy from my roast chicken. Many in my family cannot have dairy or gluten. Thank you for all your content. I love listening to you😊

I recently learned that you can multiply the nutrients in fresh mushrooms by setting them in the sun for at least an hour before using them. I'm not sure if they hold onto the extra nutrients when dehydrated, but it would be worth investigating. Also, I would really appreciate a video on dehydrating potatoes.

I have made some chicken bone broth and it is so good. I did mine in the slow cooker and ran it through three times. I am so hesitant to throw things away. I was going to pick out the vegetables, but I just had to stop. I have vacuum sealed some rice and beans. Even if thongs dont get bad and food shortages dont happen then I have lost nothing. I hope the shortages don't happen, but Iam almost sure that the prices of food and other items are going to go up. Appreciate the time you spend to show us how you do the vooking and baking without any pressure. Love to all and everybody please put up what you can and please recycle all things possible.

O started growing wheat grass out of spelt. And omg my cat loovvves it. Yesterday I showed her it and she immediately started drooling and the proceeded to chomp and lick the entire patch. Lol. It was filed with her drool. Lol. Iv never seen her act like that, cuz normally she likes grass but I won't alow her to eat it cuz if pesticides on the yards when I take her on her walk. So I finally decided to grow this and gave her a path of it. And yup, she loooves it. Just waiting on a new juicer (I brew my old one up lol) so I can juice it into wheat grass juice. But ya, spelt is omg delicious. Also if u soak it overnight and then cook it with oat milk or other types of milk, it makes a wonderful porridge.

Mrs. Mary, I’ve been using half cooked lentils with half ground meats (especially beef or sausage) for several years, now. No one seems to have noticed it in my Shepherd’s Pie or lasagna, goulash. I use dried mushrooms in about half of my meat recipes and I often powder mushrooms to add in flavor and thickener
This was great information. I have forwarded this video to both of my daughter-in-laws. With the prices of everything skyrocketing , this will hopefully be a great help to them feeding their families.
My Mom used to cook up some oatmeal and then make up patties with leftovers and then fry them and she would do the same with cornmeal mush or cream of wheat😊
I feel fortunate living in an area with a wealth of Asian markets. Rice comes in more types than in grocery stores such as red and black. Also it comes in bigger quantity containers such as 20 and 50 lb bags. Our Costco also carries these larger bags. The Asian markets also have a nice variety of dry mushrooms Dry beans are plentiful and reasonably priced at the Mexican markets. But some of my favorite beans are Gordon beans here in California. A bit more expensive the shear variety of types are impressive. There is one store in town I can get these otherwise available on line.
Wow Mary, you have blown my mind away. My husband and I are working on our working & prep pantry and the information provided in this video is an eye opener. I have saved this video for my personal reference. I've been meaning to ask you, if I don't have enough beef bones for a bone broth, could I mix other bones? Like beef, chicken and pork? We are trying to lower gluten due to my husband's diabetes. PS: About a month ago I experimented using oats instead of bread crumbs and I made meatballs and mini meat loafs (muffin size). I have them in my freezer separated into meal portions. They are wonderful.

Excellent ideas and tips. That spaghetti & meat ball dish looked great. I was a kid in the 50s, my parents were kids during the depression and "Ma" always stretched hamburger with oatmeal. LOL. Saving/repurposing the cooking broths is a knew one, makes perfect sense, love it, and there's always a water crisis somewhere in the world. Bottomline: consume less, waste nothing, conserve everything. Love your channel!!

Meal extenders, beans, rice, and potatoes. That's it. That is what we are everyday in the winter. But usually a choice of bean and rice, or beans and potatoes, cornbread, and milk. After the garden came it you had a plethora of vegetables, but it was all vegetarian in Deep East Texas aside from fried chicken or meatloaf if you had company on Sunday. Fun times! After I grew up I refused to cook beans for about 10 years, and I made rolls for dinner but I rarely made cornbread. My babies had meat and vegetables, fresh salads and very very little sugar.

I've added oats to my meatloaf for years. I've never thought of adding beans and lentils. Unfortunately oats have gotten kind of expensive in my part of the country. Many good ideas as always!

I HAD all four corners but the management company for my landlord forced me to get rid of both the prepper part and the freezer. They use a generic lease that forbids having a freezer, washer dryer or dishwasher, because some of their properties (not ours) are electric included (government subsidized housing). And they called the prepper part "clutter". They threatened to evict us if we didn't get rid of them. Yeah we're looking for another place, but they're hard to find, and prohibitively expensive right now.
Another thing you can do with pasta to lower it's effects on your blood sugar is to cook it then refrigerate it. That turns in into lower glycemic resistant carbs. And the bonus is that it remains resistant even after reheating. So if you want to stretch a meal with pasta but you're diabetic, refrigerated and reheated pasta is the way to go.

#4 Oats : For the families who like instant oatmeal but need Gluten Free - the flavor variety is very limited plus all the added sugar. I have discovered I can pulse the GF rolled oats in the food processor, portion them out into baggies with dried or freeze dried fruit and nuts. Viola! Instant oatmeal that can be made just like the store bought stuff.

I grew up on so many Italian comfort food which, when i look back, were really extender meals. Peas and pasta, cauliflower and pasta in sauce, straccitella soup, frittatas, chick pea fritters(panelle )just to name a few. They were delicious and nutritious. Mary, you are so right. We have to look back at our ancestors and recreate what they did ❤
I also never thought of these things as meal extenders, to me they are just essentials that I use in everyday cooking.
Yes, our ancestors knew nothing about the chemistry or the endocrinology of the nutritional process, yet their age-old choices of spices and their food combinations promoted optimal health! These recipes are treasure-troves of hard-earned wisdom, from my point of view (my heritage is Italian; all 4 grandparents were from the Old Country). Blessings to you and yours, from me & mine ✝️🍇💟

I like to have a bag of frozen, sliced mushrooms in the freezer. When you cook with them, you can’t really tell the difference between them & fresh. The canned ones have a more rubbery texture to me.
Mushrooms usually cost ad much as ground beef, though. That won't stop me usingbthem, but they don't save me money.
I agree, personally I absolutely don't like the flavor of canned mushrooms. I grew up on them because I came from a small town with limited fresh vegetables. My late husband introduced me to fresh mushrooms and he cooked them into a meal of deliciousness. Happy cooking and baking, Debbie Lavigne.

I just discovered frozen mushrooms last year! They worked in my Italian recepie exactly like fresh. I also dehydrate for longer term. Better than rubbery jarred!

I love red lentils, especially with chicken soup, it hides in the soup and breaks down very quickly. Red lentils also work well in spaghetti bolognaise, cottage pie and any red meat dish, casserole or stew.
I also make a lot of Indian dishes, a lot of Indians are vegetarians and they have some absolutely lovely dishes that do not require lots of ingredients but they are very filling.
I've never seen red lentils. Is it a specialty item?

I even got a 3kg bag of them from Costco for $7 last week, so I assumed they are everywhere, we can also get them in Indian or Chinese specialty shops. They are like yellow split peas but they are red. They can also be used to make Dahl. If you google them you can probably find them in America
@@robertlavigne6560 I wouldn't say they're a "specialty" item. Lentils come in several colors and sizes. I've had green, red (kinda orangey in appearance) and black lentils. In my experience, the red ones can over cook quicker than the green...the red are smaller in size than the green. Theyre all delicious! 🤗
@@robertlavigne6560 Walmart carries large bags of red split lentils in the ethnic foods section. We use a lot of it in Indian dishes, as a protein in spaghetti sauces, and for making lentil loaf, as opposed to meat loaf. Lentils have a higher level of protein than beans. It's worth trying as a meat extender. The brown or green lentils make a good vegetarian "sausage". I make mine with oats, Liquid Smoke, and sweet Italian sausage spices.

I can only speak for my area of Germany but the meat prices are just horrific lately. I have two small children (3 and 8) and husband who often works outside all day year round. I can't feed them only pasta and rice everyday. All of your videos have helped me stream line my prepping. Thank you so much! Hard times are coming. I am a nurse and maybe sadly picky about my kids nutrition 🤭 On April 30 here they announced a 25% increase on all dairy products beginning May 1. We get one liter cartons of UHT milk. I sent my husband direct from work to get 2 cases April 30! It is just getting awful. You could cry at the gas pump or in the supermarket. Please take care of you! Mary, Mary, Mary! I've watched, enjoyed and utilized your teaching for years. I don't comment often, but listen and like. However, my beautiful 19 year old bride (I married her 48 years ago) and I are awaiting our 15th grandchild. Suddenly, it has come to her attention that "food shortages" could lead to hungry children! She has nearly made our backyard a farm. She's purchased a Freeze Drier and, suddenly, my "hobby" of fermentation has caught her attention! Though she'll likely never be a commenter, she's now a viewer. Your calm, reasoned presentation has helped her realize, "I can do this!" Thank you!!
A healthy extender breakfast (or dinner) is half a bag coleslaw in a lightly oiled pan sautéed with soy sauce and a bit of chili paste. Add 4 scrambled eggs and mix, let cook, turning once, and you have a nice Chinese style omelette. You can put sriracha instead of chili paste. I'm teaching my grandsons healthy, cheap, filling meals for college.
I enjoy your channel do much and have learned a lot. I am 73 and the line you can't teach an old dog new tricks does not apply to your teaching and me learning. I have managed to get some kitchen scrap to root and put out leaves and i have a small garden. Can't wait to try some bone broth. May have to do it differently, but will let you know how it turns out. I have never tried beets and i did start some seeds. Thanks for all you show us how to do. I love the fact that you tell us what you are doing and encourage us to do more without ranting and raving about things going so bad. Thank you, Mary for the video. Sixty years ago, my mother used ground saltine crackers as a meat extender. It was years before we figured that out. Plus, she didn't have to season the meat. Thanks again for your efforts.

Lately, I have become so discouraged with the cost of everything. I really appreciate your hopeful approach that puts control back in my court. I have 3 teenagers and they eat/waste so much food. I hate buying meat, preparing it, and then throwing away half of it because nobody wants leftovers. It drives me crazy.
I would let them go without, seriously 😎 I so recall my kids standing in front of a full refrigerator complaining we have nothing to eat. I stopped buying their snacks! Nothing in our family pooped $$$.
@@kleineroteHex I have tried that route before. Unfortunately (and fortunately), my daughter gets free lunches as part of her tuition. She tends to fill up on carbs. She routinely asks my husband for Ramen or to stop at the gas station for grilled cheese. My middle son will just go hungry. He used to take leftovers every day to school, but after the Vid fiasco, they aren't allowed to use the community microwaves anymore. My oldest is at college and due to come home soon. He can't wait to eat meat because he can't afford it in his budget. I will share these wonderful tips with him.

I have used rolled oats in my meatloaf instead of breadcrumbs since the 1980s. I always have old fashion oats in the pantry because my husband often wants it for breakfast.

My very favorite cookbook is a 1933 Fanny Farmer cookbook that I bought at a used bookstore in 1985 for 25 cents. I Had just moved to Hawaii & had my 1st apartment. I was having fun & learning to be an adult. This book was written during the depression & nothing was wasted. I love it & learned to use everything without wasting. The cost of living here in Hawaii is quite high, so this book has served me well...

What a wonderful summary of things to extend a meal! I'm saving this to refer back to. Oh yes please a video on making potato flakes/starch! I always get so many great tips from your videos. I'm in that beginning stage, building skills to switch my pantry from processed to whole foods. Your channel is an excellent resource making all the things feel accessible and doable. Thank you Mary!
Potatoes keep very well if u have a cool place. Even just dig a hole in a dirt floor outbuilding, put potatoes in and put a trash can lid on. During cold mos, take them out of the ground if ur frost line goes down far.
We have always used potatoes or instant potatoes with water added
after cooking your meat and added your seasoning for Tacos or burritos. Extender plus holds the seasoning making yummy taste. 1 cup to a pound of ground meat.
@@alinewright1093 I always add beans to tacos 1 or even 2 cans pintos usually (per lb of meat) but black is good too (2-4 cups cooked beans)
And a can of petite diced tomatoes per lb of meat
Onion, garlic and green pepper also- these are just for taste!
Then add lettuce & black olives to the taco or burrito on top the cheese that’s on the meat.
Lots of ways to extend Mexican food but gotta have that meat base IMO and dairy (cheese, sour cream) just MAKES many of the dishes.
Fajitas with lots peppers and onions
Carnitas with the loads of veggies in the tortillas or on rice
List goes on n on
Indian food is good for this too
Only problem- produce is getting just as unaffordable as meat!!!!!
I'm 74 and have cooked for a large family for years. Have used most of your meal extender suggestions on a regular basis, but have never really eaten or cooked many lentils. Am fixing lasagna today with 1# hamburger and 1 c cooked brown lentils. I'm adding some parboiled curly kale along with the normal lasagna ingredients. Hope it is wonderful. Thanks for the suggestion.
I love these ideas. We are a meat and potatoes kind of family. But feeding 6 people is difficult these days and so I am trying to introduce vegetarian style meals. I would love to see how you make dehydrated potatoes.
We have seven growing boys who crave meat. I tried using lentils tonight along with finely shredded carrots and seasoned them just as I would meat with garlic, celery, onion, salt, pepper, and herbs.Then I added them to our ground beef. I was able to double the meat in our dinner and the kids didn't even bat an eye at it.
“Add beans to soup or stew and none will be the wiser.” Point taken Mary! Never met a bean I didn’t like.
The meatballs could be extended even more with fresh chopped basil leaves and/or chopped fresh spinach leaves. :) The sauce can be extended by adding veggies to it.

I add malted barley to my breads to make them lighter and fluffier. It does work well!
I love barley, not only in soups as my mother used to cook it, but as a rice replacement in a pilaf... I may be crazy, but I think it's delicious...

Roasted eggplant added to ground meat is also a great extender. Add roasted eggplant to meatballs, meatloaf etc, just drain the juices really well.
I went shopping at Walmart this afternoon and paid over $3.30/lb for the fat ground beef - $33+ for 10lbs. Then I noticed that there was not one single whole chicken in the place, nor were there any chicken breasts either! For price comparison though, I picked up two 10lb bags of thigh/leg fryer pieces @ only $4.58. I was glad to find them too. Then I immediately went to the isle with beans etc. and got several 1lb square bags of lentils (which was all they had. . .how weird, a little square bag). I plan to stretch the hamburger meat with lentils and/or mushrooms as you mentioned in the video. I also called and told my sister about your channel and ideas so she may check you out too. My mom added a few slices of ginger when cooking dried beans to reduce the gastrointestinal issues. After cooking we composed the ginger slices.
I freeze everything in ice cube trays and once frozen divide it up into baggies! Great way to get the amt you need without having to thaw a whole chunk.
Mary, I just couldn't believe it when I saw you do the meat with the oats ground with the coffee grinder. I do the same thing, and have done it for years! This was a great video to show how one really doesn't need to eat pounds and pounds of expensive meat.

This information is so helpful!!! I recently made a cabbage/ground beef stew and added a cup of lentils and kidney beans. I then added leftover corn and a can of crushed tomatoes. It was so good!!! My husband and I had many meals from this stew!!!! I plan to make it again with left over rice and celery. I can vary it according to the beans and left overs we have on hand.you could make this with chicken or sausage.....so many options!!!
Loved the shopping tips sprinkled in this video! I feel like you could do a whole video (if you haven’t already) about how you shop. Like if there’s any planning/budgeting you do beforehand, how you determine what’s a good deal, etc.

I am on a whole food plant based diet and just meant to add that with spices you can really make almost anything taste like meat, you don't have to buy meat. ☺

I soak beans overnight with a cut up raw potato. About 1 potato per cpl pounds beans. Gets rid of all my problems digesting beans. Eating beans that were soaked without the potato caused me so many gut problems. Toss potato after soaking & before cooking.
You can also soak the beans with a small piece of fresh ginger. Tops against gut problems.

I did the oat sausage and my carnivorous husband never knew. Add sausage spices such as sage, fennel, etc. so good. I also added a touch of syrup on top like I do my sausage.

That package of organic sprouted oats u showed are wonderful. I use the same kind and yesterday I made homemade oatmilk from them. Omg it was yummy and sooo much better then the oatmilk from the store (the only thing is is that I found out ya can't mix it with brandy. Lol. It separates and makes it weird. Lol) but anyways make oatmilk from those and u will love it.
To make about 3/4cups:
- Mix and soak for 20min
1c - organic, gluten free sprouted oats
3.5-4c - cold filtered water
- Blend (I used a ninja blender but any good quality blender should work, blend for about 20-30sec. I pulsed mine cuz u do not want the mix to get hot. Heat is the enemy and will make it slimy.)
- Add a pinch or two of sea salt, 1-2Tbs honey, a pinch of 'Cylon' cinnamon, 1tsp vanilla extract, 1tsp plain gelatin powder
- Pulse blend for a few sec
- Strain 2x with nutmilk or brewing bag or a tea towel (don't squeeze, just let it do its own thing untill it all falls through)
- Refrigerator (lasts 4-5days) (pref in a glass jar with a good tight lid)
- Shake before u drink cuz it separates a bit.. yummy 😋
(This isn't really good for hit things. So for hot things just use the store bought type but for everything else this is delicious. Also the oats that r strained out make a real good oatmeal cookie. So don't throw away the stuff. Strain out.) 😀
For low prep time for dry beans, the instant pot is an amazing solution
Thank you for this. I never thought of mashing some beans to put with my meat. As a recent diabetic, this is a way I can bulk up my protein as I cook for about 6 people and then freeze the meals. This is really going to help a lot. As for Rice, I use a parboiled brown rice. Then I'm still getting the nutrition of the brown rice then it doesn't take so long to cook. I also made some buckwheat the other day and I like it better than rice
and buckwheat is gluten free. it isn’t a wheat product.

My husband worked three jobs! Our children helped in the family business! During the week I made sopa de arroz with cheese and salad for dinner. Sometimes with beans on the side tortillas and salsa. On the weekends we would splurge on ground beef, ground turkey, and chicken. We would invite company, and even enjoy pizza!

Dear Mary - several years ago I worked for a group of assisted living group homes - each one cooked their own meals and one of the things the residents and I liked was mock burgers they were make from Old Fashioned Rolled Oats, cottage cheese, and eggs and a small amount of minced onion or green peppers and fried in patties -- I would love it if you could find the recipe and publish it - It supplied protein in the oats, cottage cheese, and eggs, We served them on Hamb. buns with mustard, catsup, onions, pickles, etc and they always got eaten. The potato flakes are a great idea. But an even less expensive is to just take a potato and grade it finally on a cheese grater and put it in your stews. I also use my mashed potatoes to make my chicken gravy from my roast chicken. Many in my family cannot have dairy or gluten. Thank you for all your content. I love listening to you😊

I recently learned that you can multiply the nutrients in fresh mushrooms by setting them in the sun for at least an hour before using them. I'm not sure if they hold onto the extra nutrients when dehydrated, but it would be worth investigating. Also, I would really appreciate a video on dehydrating potatoes.

I have made some chicken bone broth and it is so good. I did mine in the slow cooker and ran it through three times. I am so hesitant to throw things away. I was going to pick out the vegetables, but I just had to stop. I have vacuum sealed some rice and beans. Even if thongs dont get bad and food shortages dont happen then I have lost nothing. I hope the shortages don't happen, but Iam almost sure that the prices of food and other items are going to go up. Appreciate the time you spend to show us how you do the vooking and baking without any pressure. Love to all and everybody please put up what you can and please recycle all things possible.

O started growing wheat grass out of spelt. And omg my cat loovvves it. Yesterday I showed her it and she immediately started drooling and the proceeded to chomp and lick the entire patch. Lol. It was filed with her drool. Lol. Iv never seen her act like that, cuz normally she likes grass but I won't alow her to eat it cuz if pesticides on the yards when I take her on her walk. So I finally decided to grow this and gave her a path of it. And yup, she loooves it. Just waiting on a new juicer (I brew my old one up lol) so I can juice it into wheat grass juice. But ya, spelt is omg delicious. Also if u soak it overnight and then cook it with oat milk or other types of milk, it makes a wonderful porridge.

I’ve been using half cooked lentils with half ground meats (especially beef or sausage) for several years, now. No one seems to have noticed it in my Shepherd’s Pie or lasagna, goulash. I use dried mushrooms in about half of my meat recipes and I often powder mushrooms to add in flavor and thickener
This was great information. I have forwarded this video to both of my daughter-in-laws. With the prices of everything skyrocketing , this will hopefully be a great help to them feeding their families.
My Mom used to cook up some oatmeal and then make up patties with leftovers and then fry them and she would do the same with cornmeal mush or cream of wheat😊
I feel fortunate living in an area with a wealth of Asian markets. Rice comes in more types than in grocery stores such as red and black. Also it comes in bigger quantity containers such as 20 and 50 lb bags. Our Costco also carries these larger bags. The Asian markets also have a nice variety of dry mushrooms Dry beans are plentiful and reasonably priced at the Mexican markets. But some of my favorite beans are Gordon beans here in California. A bit more expensive the shear variety of types are impressive. There is one store in town I can get these otherwise available on line.

I've been meaning to ask you, if I don't have enough beef bones for a bone broth, could I mix other bones? Like beef, chicken and pork?
We are trying to lower gluten due to my husband's diabetes.
PS: About a month ago I experimented using oats instead of bread crumbs and I made meatballs and mini meat loafs (muffin size). I have them in my freezer separated into meal portions. They are wonderful.

Excellent ideas and tips. That spaghetti & meat ball dish looked great. I was a kid in the 50s, my parents were kids during the depression and "Ma" always stretched hamburger with oatmeal. LOL. Saving/repurposing the cooking broths is a knew one, makes perfect sense, love it, and there's always a water crisis somewhere in the world. Bottomline: consume less, waste nothing, conserve everything. Love your channel!!

Meal extenders, beans, rice, and potatoes. That's it. That is what we are everyday in the winter. But usually a choice of bean and rice, or beans and potatoes, cornbread, and milk. After the garden came it you had a plethora of vegetables, but it was all vegetarian in Deep East Texas aside from fried chicken or meatloaf if you had company on Sunday. Fun times! After I grew up I refused to cook beans for about 10 years, and I made rolls for dinner but I rarely made cornbread. My babies had meat and vegetables, fresh salads and very very little sugar.
I put a bit of the juice from the tomatoes into the sauce can and swish it around with a spatula to get every bit of sauce from the can

I've added oats to my meatloaf for years. I've never thought of adding beans and lentils. Unfortunately oats have gotten kind of expensive in my part of the country. Many good ideas as always!

I am 78 years old, and when I was in high school we made something called emergency steak. It was made with ground beef and oatmeal along with some spices. My mother was a child of the depression , so I have memories of her stories.
I cook my beans and scatter them on a cookie sheet and freeze. then when I bag them. they are loose and I can pull out what I need
