That kaffir lime dessert is actually hard to find and many Thai have never had it. You basically need to take only the white part of a kaffir lime, wash it with salt, rinse with water then repeat multiple times to fully remove the bitterness. Then soak it in salt water overnight and it will "bloom". Then wash a few more time to get the salt off. Then you can cook it in syrup until it's clear, let it sit to cool before you can finally serve it with ice. It's not difficult to make, just incredibly time consuming so it's not commonly made.

Purple yam is used a lot in asian desserts. This is different from the purple fingerling potatoes. "Ube" as it is called in the Philippines, is used in several different desserts, "halaya" cooking it to a super thick consistency with coconut milk until the mixtire is a soft candy stage. That honey comb dripping onto jello/agar I have not seen ever very unique and impressive presentation. I can see a lot of tapioca being used since Thailand is the leading exporter of tapioca.

I just went there yesterday and other than the location and presentation of the food, it is nothing great! I tried everything you shared and was waiting for the wow factor! The taste itself is lacking but the presentation is 10 on 10!

@@theroamingcook Mai Pai is the older bamboo, it is too tough to eat, its uses are for making handicraft such as basket weaving, hat, among other things. Naw Mai is the young shoots of the bamboo. It is edible. Hope this help, Gary.🙂

This Paddy guy travels all 77 province but refuse to learn some basics of the language. Gary should stay away from this close-minded guy.
Now you are being narrow minded. It is his choice whether to learn or not to learn to speak Thai, I am certain he understands more than he lets on. Some people has a knack for languages, some just can't get it right. My brother lived in the USA for 41 years, his accent is still heavily thick. My sister lived in the USA for nearly 30 years, her English is laughable, especially when she pronounces certain words, but it doesn't make them less of being humans. Gary, is a good example of someone who has a knack for languages. I like when he and Paddy get together, they are funny, down to earth, and complement each other really well. Just my 2 cents. 😉

I’m will definitely be doing more videos with Paddy but more than that, I’ll just be spending time with home because he’s a genuinely lovely person and we’re good friends. He didn’t mean anything about that comment and he actually says how basic our desserts are back home compared with Thai ones in the video.

Yes, Mai Pai is Bamboo stalk, and Naw Mai is the edible part of Bamboo as in young shoots. Any soup or stew with Naw Mai is delicious 😋 to me. Yummy!
