- Ingredients:
6 oz of chorizo
2 flour tortillas
Corn:
2 tbsp of butter
1 can of corn
Salt and pepper
1.5 oz of cotija cheese
2 tbsp of crema
2 tbsp of mayo
Cilantro (chopped)
Chili powder
Cayenne powder
Lime juice
Recipe:
1. Cook 1 can of corn in 2 tbsp of butter. Season with salt and pepper.
2. Transfer the corn to a bowl and mix in cotija cheese, crema, mayo, cilantro, chili powder, cayenne powder, and lime juice.
Tacos:
1. Cook the chorizo for 5 min or until the fat is rendered.
2. Dip both sides of the flour tortillas in the fat and pan fry on both sides.
3. Add the chorizo, then corn to the tacos.
4. Top with cilantro and lime juice.
